I have one called Pizza Pasta. Its healthy and the kids love it.

1 jar of Passata
1 tin of tinned tomatoes (chopped or whole)
Olive oil
Mixed herbs
Pinch of sugar
1 cube (small) of Mozeralla cheese
Choose 4 vegatables of your choice(dice into same size bites)
4 Cherry tomatoes (quartered)
Salt and Pepper
Pasta of your choosing

Dice the veggies into bite size pieces and place on a tray.
Put the cherry tomatoes once quartered with the veggies.
Sprinkle some mixed herbs over and pour the Olive oil over them.
Put into the oven and cook until veggies are soft.
Put pasta in a pot and cook as normal.
In a pot pour the Passata and the tin tomatoes into the pot and put on a low heat.
You only want to warm up the sauce.
While warming put a cube of Mozzerella into the pot and melt it slowly.
Add salt and pepper to pot and also a pinch of sugar.
When the veggies are done leave to rest for 1min.
Then put them in the pot and bring the heat up slowly.
Wait 5mins and then using a blender, blend it down to a thick sauce making sure all the veggies have been blended.
Leave on a low heat until pasta is cooked.
When the pasta is done serve into bowls not plates.
Add more Mozzerella for presentation if you want to.
Serve with a side salad or have for a quick lunch.

Kids love it and its quick cheap to make great for those on the run and the best thing is you can freeze the rest if you make a big pot of sauce. You can even use it to make homemade pizzas as the tomato base....2 for 1 good eh!!

Enjoy!!!!

hey lindasue

heres my favorite recipe, its Buttermilk Pancakes.

Serves: about 10 pancakes

Preparation time: 15 minutes or less

Delicious with maple syrup and whipped cream.

Ingredients
1¼ cups plain flour
1 teaspoon bicarbonate of soda
1 heaped teaspoon baking powder
¼ cup sugar
¼ cup sunflower oil
1 egg
300 mL buttermilk
Salt

Method
1. Sift flour, bicarb soda and baking powder into a mixing bowl.
2. Add sugar, egg, oil, buttermilk and a pinch of salt.
3. Blend together with a hand mixer until smooth.
4. Melt some butter or margarine in a frying pan over medium heat.
5. When pan is hot, pour batter into pan to form a circle about 10-15 cm in diameter.
6. Pancake is ready to flip when bubbles form and pop on the upper surface. Underside should be golden-brown in colour.
7. Flip and cook the other side until brown.

~best of luck!~

Recipe notes
If the batter is too thick you can add a small amount of milk (full fat or skim milk, not buttermilk).

This is my favorite dinner. I usually serve it with mashed potatoes and a vegetable.

Meatloaf

1 pound ground beef
1/2 cup finely chopped onion
1/2 cup dry bread crumbs
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon worcestershire sauce
8 ounces can tomato sauce, divided
1 egg
2 tablespoons vinegar
1/4 teaspoon dry mustard
2 tablespoons brown sugar
1/2 cup water

Mix together meat, chopped onion, bread crumbs, salt and pepper, egg and 1/2 cup of the tomato sauce. Form into a loaf; place in a baking pan. Mix together remaining tomato sauce, vinegar, mustard and sugar; pour over meat loaf; pour water into pan. Bake in a preheated 350° oven for about 1 hour, until done.

Another family favorite:

BBQ Beef Pot Pie

2 lbs Ground Beef
8 oz pkg frozen or 1 (15 oz) can mixed vegetables, drained
2 cans refrigerated biscuit dough
1 bottle (12 oz) Bullseye BBQ sauce

Preheat oven to 350 degrees F.
Crumble ground beef into skillet and cook until no longer pink. Drain fat from beef and discard.
In a 9x13x2 pan, combine cooked beef, mixed vegetables, and BBQ Sauce. Top with refrigerated biscuit dough.
Cover with foil and bake at 350 degrees F for approximately 30 minutes or until biscuits are done.

*Some variations on this might include using left-over shredded roast beef in place of the ground beef, gravy in place of the BBQ Sauce, or Bisquick or mashed potatoes in place of the refrigerated biscuit dough.
