Here are two simple sausage recipes...one with breakfast sausage, one with Italian Sausage.

Breakfast Sausage Soup:

Brown some breakfast sausage in a pan...or use leftover breakfast sausage.

Put water in a medium size saucepan and add the sausage. Crumble the sausage into the water.

Add sliced carrots, and a package of ramen noodle soup (beef flavored) . Also add beef bullion untill you get the taste you want.

In a separate corningware dish, simmer broccoli and caulifower..cut up very small. Simmer about 20 minutes. (you need to do this separate..or it will change the flavor of the soup).

Drain the broccoli and caulilower, and add to the soup.

My husband loves this..even though he hates broccoli and cauliflower.

Super Easy too! (I accidentially invented this one).



Italian Sausage Stew:

Here's a sausage stew recipe I make in the crockpot, which is quite yummy:

This crockpot sausage stew is made with Italian sausage, potatoes, garlic and onions, tomatoes, and seasonings.
INGREDIENTS:
2 to 3 medium potatoes, peeled, cubed
1 tablespoon cooking oil
1 to 1 1/2 pounds Italian sausages
1 large clove garlic, minced
1/2 cup chopped onion
1 can (15 ounces) stewed tomatoes
2 cups chicken broth
1 can (6 ounces) tomato paste
1 1/2 teaspoons dried oregano
1/2 teaspoon salt, or to taste
1/4 teaspoon pepper
2 medium green bell peppers, seeded, chopped
PREPARATION:
Lightly grease or spray slow cooker; place potatoes in bottom of pot.
In a large skillet, heat oil over medium heat. Add sausage links and brown. Slice links into 1-inch pieces and transfer to slow cooker.

Add garlic and onion. In a separate bowl, combine tomatoes, chicken broth, tomato paste, oregano, salt, and pepper; stir to blend. Pour mixture over the sausages in crockpot. Cover and cook on LOW setting 8 to 10 hours, until potatoes are tender. Add bell pepper about 1 hour before serving. (I add it at the beginning)
Serve in bowls with garlic bread.

My boyfriend just loves sausages cut up and cooked in gravy with onion etc. Served with mashed potato! I also do the same with curry!

in large skillet add 1 lb. loose hot or sweet italian sausage, 1 green pepper diced , 1 red pepper diced, and 3 large potatoes peeled and sliced, 3 Tblspoons oil, salt and pepper to taste. cook covered on med. heat until potatoes, meat and peppers are cooked..stirring gently every few minutes. apprx. 25 to 30 min.
