Equestrian is the term that includes all of the horse events. Within that there are horse shows and horse races and rodeo. There's different types of events in each of those. There can be english or western and can include jumping to judge the rider or horse or the time, flatting (walk trot and canter) to judge the horse or to judge the rider, reining, cattle cutting, roping, penning, cross country jumping. Horse races include different events too... they can either be on dirt or on grass or a combination of both, they can be on flat ground in a circle or over a hills, there can be jumps for steeplechasing, and within all of those, there are different lengths of races from the sprint to the mile and a quarter and there's even long distance races. Also, sometimes there's team games... in the US, people play polo, but there's a game called pato that started in argentina that's also played on horseback.
So the common term to define all of it is equestrian events and that involves a lot of things.

Broadly, sports with horses are known formally as equestrianism. But it's such a general term you never really here it. It can be broken down into many different categories depending on the type of competition and the riding style. For instance, you have horse racing, polo, three-day eventing, dressage, show jumping, hunters, huntseat equitation, hunter pleasure, hunter hack, western pleasure, trail, reining, saddleseat, and those aren't even all of them. If you're looking for a specific equestrian sport, a description would be helpful to narrow down the field.

It's a Hunter Pace. You get a map of the course, you ride the course, and the winner is the team that comes closest to the :"ideal" time - a predetermined but unpublished time. This discourages racing, and keeps it safer. The course usually goes through fields and woods, over streams, and so on. Often multiple levels are provided, from walk/trot to trail riders to regular flat to over fences. Each level has a different "ideal" time to meet. I've had lots of fun doing this as an adult, and the kids I see competing also seem to enjoy it immensely. It's a great sport for mixed level teams, such as yours. Since it's judged solely one time, and not on expertise or performance, your differing skill levels don't matter. Many venues allow riders in the flat divisions to school over the jumps on course if they wish - thus, you could have some fun jumping while you're doing the course, without disqualifying your team. These are so much fun, and most horses really enjoy them too. Have fun!

Polo...it is a game played while on horseback, but is not found under 'equestrian' which refers to horseback riding events...

Horseback riding, racing, jumping? Is that what you mean? There are several different sports actually in riding itself, but that is generally what I call it.
