Anything that walks, swims, crawls, or flies can be eaten. It just takes an open mind and a willing stomach. Of course, there are some people who will eat anything. Rocky Mountains oysters - also known as prairie oysters, Montana tendergroins, cowboy caviar, swinging beef, and calf fires - are true Western delicacies.

Do it the way the cowpokes do it. In early summer, time for branding, de-horning, vaccinating and casterating, just throw 'em in the branding fire. By the way, anyone who thinks he is going to get a big bull to stand still for this is taking his life in his hands!! Best you stick with the calves, Mr. By the way, they are referred to as Rocky Mountain Oysters.

Braising is best as it allows the soy-oyster sauce marinate to gently pervade the ballzzz; i always make it a point to have my Chinese-style bowl of soup noodles with beef slices, veins, stomach, and other spare parts - lips smacking good!!

interesting note: "Fear Factor" China DO NOT have any eat-wierd challenge - no raw bull ballzz, no wormz cocktail, nada - cuz we love to eat... everything with ballzzz!!! LOLLLLLL

Put them in a crock pot on low for 4 hours and season to taste. Serve over tripe and have a nice bottle of Chianti to go with it.
