Some one asked me this question about refrigeration of water. Ice slabs of dimensions about 120X20X30 are made in ice plants and it is generally seen that they are empty towards inside from the two side surfaces.

it is because of following
1. mould shape
2. ensures faster cooling within large slabs thus ensuring quick formation of ice
3. ease of handling

Ice slabs made in ice plants are made by ammonia chilling plants.
The slabs are standing upright and the ammonia coils are inserted and removed in the center of the block vertically.

There may be variations of this technique depending upon the volume and speed of production.

so easy for 2 reasons :
1) to be easy to stack them together on top of other and they fit
2) to get ice out easliy too
