meatloaf, hamburger helper, and we had spagetti tonight. Any fun and interesting meal suggestions? If so, please also include the recipe. Thanks so much!!!

I've had the same exact problem recently. I ended up making Hamburger Vegetable soup.

1 pound cooked ground beef
1 jar green beans (my parents can theirs from the garden) or 2 cans
1 jar tomatoes (my parents can theirs from the garden as well) or 2 28oz cans diced tomatoes with juice
1 can each vegetable that you like (I used carrots and cream corn - it thicked it up just enough)

Mix all together and heat. If you want, you can also add a cup of cooked white rice. I've added it before but didn't have any rice ready this last time. Once the hamburger is cooked, this soup only takes about 10 minutes; just long enough to heat everything.It turned out EXCELLENT!!! Double if you want to use both pounds of meat. I hope you enjoy it! I know we sure did!!

If you want to try ground beef with a totally different flavor I'd suggest a recipe from a friends Mom for Indonesian Meatballs. I've played with it over the years and almost always make it as a meatloaf now, as it is just so much easier than messing with meatballs. But it can be made either way.

Like all meatloafs I never measure the ingredients, just eyeball the right amounts. Into the ground beef add then mix;

Coconut (the authentic recipe calls for unsweetened but if you don't mind sweet flavor in meat it's yummy with sweetened flaked coconut).
Mashed potatoes
1 egg
Soy Sauce
Garlic Powder
Onion Flakes or Powder
Curry Powder (I'm not a big curry fan but a little adds a nice flavor).
Of course you can add or substitude any seasoning per your taste.

The original meatballs didn't include the soy sauce, but they were cooked in a soy sauce liquid base. I find you get the same flavor by just adding some to the ground beef before cooking. I don't recall the exact way to do that as it was a real pain to cook that way, so I modified that years ago. Just don't add too much or they will be very salty. For 2 lbs I'd guess about 1/4 cup. And the mashed potatoes take the place of bread crumbs and I think give it a nice texture (especially when it contrasts the coconut and onion flakes).

I was told these are traditionally served with green beans...no clue why, but might as well add that tidbit. I really enjoy this recipe since it tastes so different than a typical meatloaf, and is super simple to whip up.

If your store has it, a delicious side dish is Jasmine Flavored Rice. The flavors go really well together. But I know not all market chains carry it, and it's still good without it.

Hamburger-Green Bean Casserole
1 lb. ground beef
1 can cut green beans
1 can tomato soup
Mashed potatoes
Shredded cheese


Step 1
In a skillet, brown hamburger and drain off excess fat. Add green beans and tomato soup (do not add water) to meat. Heat in skillet until just hot.

Step 2
Pour hamburger mixture into casserole dish. Spoon mashed potatoes over meat.

Step 3
Bake in a 350-degree oven for 25 to 30 minutes and then sprinkle cheese on top of the mashed potatoes. Bake an additional 5 minutes or until cheese is melted.

Make a vegetable casserole. Brown your ground beef. Use 2 cans of Campbell's Vegetable Soup for every 1 pound of ground beef. Bake at 350 degrees for about an hour in a covered pan. After about 40 minutes, place raw biscuits (preferably Pillsbury) on top of casserole. Continue to bake until biscuits are brown.

Taco soup is a fav. Recipe:

Brown the beef with onions and some taco seasonings.Add 3 cups water and 1 lg can of tomatoes, and let cook. To that add 2 cans of kidney beans, undrained, 2 can (8oz) of tomatoe sauce and simmer 20 minutes. Serve in bowls and top with fritos, sliced olives, combination cheese and a dollop of sour cream. YUM. (for 2 lbs of beef, I would double ingredients)

Beefy cheese empanadas is another one. Recipe:

Just brown beef with onions to your liking. Unroll a couple of pkgs of pillsbury grand biscuits and roll out slightly. To beef add mushroom soup (although I have made this without the soup and it's just fine) and some cheddar cheese and canned sliced mushrooms if you like, and a can of drained kernal corn.. Put a heaping Tbs on each roll, fold over and seal with a fork. Bake in 375 oven for about 20 minutes or until brown. Serve with a great green salad and brownies or baked apples for dessert.

Moroccan Meatballs -- Tagine Kefta

For the sauce--
6-8 medium tomatoes, cored and roughly chopped
1 tablespoon paprika
1 teaspoon cumin
1/2 teaspoon cayenne pepper
3-4 tablespoons chopped fresh cilantro
2 garlic cloves, minced
salt & freshly ground black pepper, to taste
1/4 cup vegetable oil

For the meatballs--
400 g ground beef
1 tablespoon paprika
1 teaspoon cumin
1/2 teaspoon cayenne pepper
3-4 tablespoons chopped fresh cilantro
2 garlic cloves, minced
salt & freshly ground black pepper, to taste

Mix all the ingredients for the sauce together in the tagine(you can use a skillet with a lid), cover and let simmer gently over a medium heat for 15 minutes, stirring occasionally.
Meanwhile, use your hands to mix the ingredients for the meatballs together and then roll the meat into small balls, about 1 inch round.
After the tomatoes have simmered for about 15 minutes, stir the sauce and add a little water if you feel it is needed.
Place the meatballs in the sauce.
Do not stir but just let them sit on top of the sauce(*you can stir them in after they have cooked somewhat).
Lower the heat, cover and cook for another 8-10 minutes. Uncover and let simmer another couple minutes if you feel the sauce needs thickening.
Serve with lots of crusty bread for dipping in the sauce.

The first one sounds a little weird, but it's really good!

BBQ Beef Pot Pie

2 lbs Ground Beef
8 oz pkg frozen or 1 (15 oz) can mixed vegetables, drained
2 cans refrigerated biscuit dough
1 bottle (12 oz) Bullseye BBQ sauce

Preheat oven to 350 degrees F.
Crumble ground beef into skillet and cook until no longer pink. Drain fat from beef and discard.
In a 9x13x2 pan, combine cooked beef, mixed vegetables, and BBQ Sauce. Top with refrigerated biscuit dough.
Cover with foil and bake at 350 degrees F for approximately 30 minutes or until biscuits are done.

*Some variations on this might include using left-over shredded roast beef in place of the ground beef, gravy in place of the BBQ Sauce, or Bisquick or mashed potatoes in place of the refrigerated biscuit dough.

OR

Hamburger pizza

1 lb hamburger
1 box of pizza (flour mix for dough, pizza sauce and Parmesan)
1 pkg of Mozarella cheese
diced onion
diced green pepper
1 pkg pepperoni
fresh sliced mushrooms or 1 small jar of mushrooms
garlic powder and Italian seasoning

Prepare pizza dough according to directions. While it's rising, brown and drain hamburger. In another pan or in the microwave, cook the onion, mushrooms,and green peppers until soft. Add the veggie combo to the hamburger as well as the seasonings (to suit your personal taste.) Simmer for 5 minutes. Spread the pizza dough on the bottom of a casserole dish. Alternate layers of the following: meat, Mozarella, pepperoni, and pizza sauce. End the layers with the pizza sauce and a sprinkling of Parmesan. Bake at 425 degrees for approx. 20 minutes.

How about tacos?

I like to mix in an egg and fresh bread crumbs to the raw meat. Use a 1/4 cup of water while browning. it will help heat the meat more evenly and keep it from getting rubbery. The water will evaporate out as you brown the ground beef. Drain off fat and then add your seasoning and the required amount of water.

I like to mix in a large can of refried beans to give it a pastey texture to spread into a burrito shell and add sharp shredded cheddar and grab a few packets of mild sauce from Taco Bell to add a little more zing!

Have a side of flautas or Taquitos (Dimelex makes good not spicy chicken ones) and little bowls of sour cream to dip in!

Beef, Potato & Mozzarella Lasagna
Serving Size : 4

1 lb. potatoes, peeled, thinly sliced
1/2 lb. lean ground beef
1/2 cup chopped onion
1 jar (14 oz.) spaghetti sauce
3/4 cup Ricotta Cheese
1/4 cup Parmesan, Grated
2 egg whites
1/2 cup shredded Mozzarella Cheese

PREHEAT oven to 350°F. Cook potatoes in large pot of boiling water for 5 minutes; drain. Meanwhile, brown meat with onion in large nonstick skillet, stirring occasionally. Drain. Add spaghetti sauce to skillet.

MIX ricotta cheese, parmesan and egg whites until well blended. Spoon half of the meat mixture into 8-inch square baking dish sprayed with cooking spray. Cover with half of the potatoes; top with layers of the ricotta cheese mixture, remaining potatoes and remaining meat mixture. Sprinkle with mozzarella cheese. Cover with foil.

BAKE 50 minutes. Remove foil. Bake an additional 10 minutes or until cheese is melted.

cheeseburger pie...easiest recipe EVER...

brown your ground beef with some chopped peppers and onions. stir a can of tomato sauce (more if you think you need it). put half of this mixture in the bottom of a 9x13 cake pan. next, put a layer of cheese slices, followed by the rest of the meat mixture. then on top of that, unroll a roll of pillsbury crescent rolls (you might have to stretch it out a bit to make it fit..doesn't have to be perfect). bake at 350 for about 15 mins or until the crescent rolls brown. let stand for a few mins then cut and enjoy!
