whenever I make lasagna, the top layer always turns out to be hard and dry, and I dont know how to keep it moist for periods of time.

A really simple version 1/2 box lasagna noodles, about 8 oz 16 oz ricotta 8 oz shredded mozzarella 2 eggs 1 32 jar of pasta sauce 1/2 cup parmesan cheese 1 pound of ground beef chopped parsley Boil water and then cook noodles in salted water until a dente or about 8 minutes. Brown meat and add pasta sauce Mix ricotta with half the cheese, a little parsley, salt and pepper Place a small amount of meat sauce on 9x13 pan (I use an oval dish for presentation, but most people use a glass or ceramic pan) Add a layer of noodles Add meat sauce Add cheese and repeat one or two more times. Then add another layer of sauce and lots of parmesan and mozzarella and bake for 45 minutes at 375 degrees. The noodles must be covered or they will dry out. Sometimes I fry breaded eggplant and zucchini and add to the layers, but this is the basic version a child could make without a whole lot of ingredients in the cupboard.

I leave off the top layer of cheese, cover it with foil and cook it until it starts to bubble. Then I take off the foil and cook it for about another 15 minutes. THEN I cover the top layer with cheese and just cook it until the cheese is nice and melted and gooey. I always find if the cheese is put on right at the start it does seem to get hard and dry. If you reheat your leftovers in the microwave covered with plastic wrap they should stay pretty moist too.

First, make sure that all sides, top and bottom of the entire lasagna are fully covered with sauce and that the lasagna is basically "swimming in sauce". When I make it, it means I have to have twice as much sauce as the recipe asks for.

Also, if you cover the lasagne with a "tent" made of foil, it does help.

You need to put aluminum foil on top. Maybe not at first, but after about 1/2 hour of cooking. It will cook up perfect if you do that.

make sure the top layer of the nooddle is covered with the meat sauce and then the cheese this will keep it moist..........

Do you cover it with aluminum foil while it's baking? I always do this with mine and it turns out to perfection. Try this.
