When you look at the ingredients on the back of the jar, the main ingredient is -- whey, canola oil, milk, milk protien concentrate, salt, lactic acid, sodium aldinate, mustard, flour, worchestershire sauce, sorbic acid as a preservative, milkfat, cheese culture, oledresin paprika, annato, natural flavor and enzymes. My feeling is that if it is cheese, it should be the dominant ingredient.

Because whey, milk, milk protein, milkfat, lactic acid (from milk), salt and cheese culture added up all together IS cheese. Well, it's what the cheese you and I buy in bricks or cubes is actually made up of.

It's just that the process you use to make that kinf of cheese is different than making the concentrate that makes up a tube of cheeze wiz. They are put together at different stages and in different amounts than when you "set up" traditional cheeses.

And, I think here in the US there is a very strong cheese lobby, so the USDA "naming conventions" state that you're not allowed to label anything as cheese, that is not processed in that "normal" way--even if all the items together in the end actually do make cheese.

I think those are the ingredients that make the cheese.
because i've seen it made.

It was on a tv show called "How it's made"
on the discovery channel.

and then again Kraft could be lying..

It is called false advertisement. Most companies use this technique to get people to buy their products. That how the product is sold and gets money for plus it makes the product seem more popular making alot of people want to buy it. If you ever watch the movie Super Size Me about McDonalds that proves my point.
