The body breaks it down slower--lots of the stuff in veggies is either sugar or high fiber. The body can't break down fiber, so it pushes it through your system really quickly, and the sugars in veggies are generally easily broken down--simple bonds that can be broken by simple enzymes.

In contrast, fats have a more complicated molecular structure (as well as about 3 times the energy of carbohydrates), and the bonds take more work to break down. This means they'll sit in your digestive system longer before they can be absorbed by your intestine-lining cells... and THAT means that you stay fuller longer.

So a hypothesis could be:

If the nutrients in veggies take less time to break down than the nutrients in high-fat meals, then the body will absorb them faster and stay "full" for less time.

Food that has high fat content is more satisfying than vegetables are. I think it goes back to caveman days when you had to eat enough to put fat on your body so you can live through the lean times of no food.

That may be why a spoonful of peanut butter can be an appetite suppressant for some folks.

veggies have quick carbs...they make energy fast in your system and you body burns them off faster. (kicks in to enrgery in about 15-30 minutes and last about an hour or so) the meats in your meal takes hours to turn into energy but then takes 3-5 hours to burn them off. usually by then you are eating your next meal. and fats in your diet, take 8 hours to turn into energy and even longer to burn off which is why they turn into fat in your body, they are there from your first meal to the next two meals while your body tries to burn up all the easier foods first, fruits, veggies, other carbs, meats, then fats.

Some fats can take longer to break down and digest leaving one feeling more full.

fats slow gastric emptying and they also convey messages of fullness to the brain. vegetables do neither of that and they are low calories.
