I re-melt chocolate all the time to make fondue or to dip pretzels into.
If you want the chocolate to stay softer longer,try adding a tablespoon of cream to it while it is melting in the pot or bowl.

Yes, do it in the microwave slowly. 15 second intervals, stir and do again til melted and smooth.

yes the correct term is called tempering i have found the best way is to throw it in the microwave just until you see it start to melt then take it out and stir
