I use the magnetic lasso to select the head. Then go to Edit>Copy.
Then I paste it onto a white bacground. If you go to New, under file it will come up with a size for the object you've selected, but make it larger. so you will have a white border all around the image. Then flatten the layers and make any corrections where you might have picked up background maybe around the hair. Now use the magic wand on the white, then go to Select and select the inverse. This will outline the head you selected. Now go to File >New, then select the transparent background. Be sure to save this picture as a PSD or a Tiff. Jpg won't support the transparent background..

Now go to the picture you are putting it into and outline the area where the head is to be inserted. You may have to outline hairlines of people next to the head. You can even outline the shirt collar because you are going to paste the head into it. Don't outline the exact head go outside of it if you can because when you paste it will cover it. Go to Edit>Paste Into. Be sure to use Paste>Into...not the Paste. Use your move tool to move it into position. Hit Ctrl + T to bring up your transform box. Hold down the shift key and use the corner arrows to adjust the size of the picture. If you put the arrow outside this box on the top of bottom you can tilt the picture for a better fit.

After you do all this and it looks pretty good but the color may not match, one may be bright and the other yellow. Put your eyedropper on the face of the person next to the one you are inserting. This will change the foreground color to that one. Then outline around the neck and face and around the hairline. Then go to Edit>Fill. Change the fill to Color and 100%. This should give you a close proximity to the colors of the other folks in the picture.

Good luck. Any more questions e-mail me. This is one of the great things you can do with PS. Once you do it a few times its very easy.
