does anyone have a lowfat walnut cookie recipe, that'll make my cookies crispy and dry.

Hermit Cookies


1/2 cup shortening
3 tables. granulated brown sugar replacement
1 egg
1 1/2 cup flour (sifted)
1 tea. baking powder
1 tea. cinnamon
1/4 tea. salt
1/4 tea. baking soda
1/4 tea. nutmeg
1/4 tea. ground cloves
1/3 cup skim milk
1/3 cup raisins, chopped
1/4 cup walnuts, chopped


Cream together shortening and brown sugar replacement. Add egg; beat until light
and fluffy. Combine flour, baking powder, cinnamon, salt, baking soda, nutmeg
and cloves in sifter; add alternately with milk to creamed mixture. Fold in
raisins and walnuts. Drop by teaspoonfuls onto lightly greased baking sheets, 2
to 3 inches apart.

Bake at 350 for 12 to 15 minutes.

Yield: 48 cookies
Exchange 1 cookie: 1/3 fruit, 1/2 fat
Calories: 1 cookie - 40

These are the best, but don't tell grandma!

INGREDIENTS
6 (1 ounce) squares unsweetened chocolate
3/4 cup butter
4 eggs
2 tablespoons vanilla extract
1 1/2 cups all-purpose flour
2 3/4 cups white sugar
1/2 teaspoon salt
1 1/2 cups chopped walnuts
DIRECTIONS
Preheat oven to 375 degrees F. Grease and flour a 9x13 inch baking pan.
In double boiler over low heat, melt the chocolate and butter together, stirring frequently until smooth. Remove from heat and let cool.
In a large mixing bowl, mix together eggs, vanilla, salt and sugar. Beat with an electric mixer for 8 to 10 minutes. Slowly pour in chocolate mixture and flour. Stir in the walnuts. Spread batter evenly in the prepared pan
Bake for 17 to 20 minutes in the preheated oven, until the top is crackled. Let cool for 2 hours before cutting into squares.

Black Walnut Cookies:

20 min 15 min prep
4 dozen brownies

1 cup sugar
1 cup brown sugar, firmly packed
1-2 cup butter, softened
2 large eggs, beaten well
1 teaspoon vanilla extract
4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 cup black walnuts, chopped

1. In a small bowl, combine flour, baking soda, and cream of tarter; set aside.
2. In a large bowl, cream butter, sugar, and brown sugar.
3. Add beaten eggs; mix well.
4. Add dry ingredients; mix well.
5. Fold in black walnuts.
6. Separate dough into 4 parts.
7. Roll each part and pat on ends to make flat.
8. Refrigerate overnight or longer.
9. Preheat oven to 375°F.
10. Grease a baking sheet.
11. Slice off cookies from the refrigerated rolls and place on prepared cookie sheet.
12. Bake for 5 minutes or until golden light.
13. Cool on wire rack.

A walnut cookie recipe, rolled into crescent shapes and baked.
INGREDIENTS:
1/2 cup unsalted softened butter
1/3 cup sugar

1 cup ground walnuts
dash salt
1 teaspoon vanilla extract
confectioners' sugar
PREPARATION:
Preheat oven to 325°. In a mixing bowl, cream butter and sugar. Mix in flour, walnuts, salt, and vanilla to make a smooth dough. Roll out dough to 1/4-inch thick. Cut out with crescent-shaped cookie cutter or other shapes. Reroll scraps of dough and repeat rolling and cutting. Bake cookies on ungreased cookie sheets for about 10 to 12 minutes, or until just set. Let stand for 2 minutes; transfer to wire racks to cool. Sprinkle cooled cookies with a little confectioners' sugar.Makes about 3 dozen cookies.

WALNUT COOKIES

1/2 c. butter
1/2 c. brown sugar & brown sugar substitute equivalent to 1/2 c. brown sugar
1 egg
1/2 c. ground walnuts
6 tbsp. plain low fat yogurt
2/3 tsp. maple or black walnut flavoring
1 tsp. vanilla
1 1/2 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. double acting baking powder

Cream butter with sugar and sugar substitute. Add beaten egg, walnuts and yogurt; cream again; add the flavorings. Sift dry ingredients together. Gradually add dry ingredients to creamed mixture; beat well.
Drop by teaspoons on cookie sheet sprayed with vegetable spray. Flatten with a fork if you wish. Bake at 375 degrees until edges are brown, about 15 minutes. Cool on rack; store in a tight container in a cool place or freeze.
