one course would be pizza....or spaggetti
two course would be salad and THEN spagetti
three course would be salad then spagetti then dessert....that kind of thing...get it?
If you had salad an appetizer then a chicken dinner then dessert...that would be a four course dinner.

Some people are being very, very funny. A better answer would be "toward the back of almost any French or Italian cookbook". Marcella Hazan writes some excellent Italian cookbooks, which might provide you with a good place to start.

It's nothing that deep. Let's say you bring a bunch of food out at once. That's one course. The diners polish that off. so you bring another round of food out. That's another course.

Asian food does not tend to arrive in courses. French, Italian and Spanish (not to be confused with Mexican) food do. An Italian three course meal, maybe would be

Antipasto - a variety of appetizers
I primi - first course, consisting of pasta, risotto, polenta, soup or something else intended to take the edge off the diner's appetite

I seconi - main course, meat

The vegetables might arrive with the meat, or might come as yet another course. Keep in mind that in any kind of Mediterranean cooking, the vegetables aren't some tiny little puddle of overboiled canned stuff, they're one of the main foci of the meal. The table will certainly not be looking bare.

That could be a four course meal, if you do it that way, or you might leave out the antipasto, taking it back down to three courses, which many people will, especially when cooking at home. You might ask "what about the desert course", but in Italian cooking sweets are something completely seperate from the dinner.

A one course meal is generally just the main course of the meal eg, steak potatoes and green beans or tuna casserole and broccoli or curried chicken with rice or 5 bean chili with a baked potato. A 2 course meal would be main course and dessert such as apple pie or chocolate cake. A 3 course meal would be Salad, main course and dessert or soup, main course and dessert. All meals are built around the main course which is typically a combination of meat vegetables and acarbohydrate such as potato, pasta or rice.
