The seeds actually aren't that hot! Capsaicin is the stuff that makes peppers spicy. It is concentrated in the veins and pulp of along the sides of the pepper (not the seeds - they actually contain a very small amount of capsaicin) and stimulates the nerve endings in your mouth, fooling your brain into thinking you're in pain.

The capsaicin (what makes a pepper hot) is concentrated in the placenta of the pepper (blister like sacs along the pepper's inner wall) to which the seeds are attached. A smaller amount is found in the veins or white lines running from the top of the pepper to the bottom. The seeds contain only a small portion of capsaicin. So, contrary to popular belief, THE SEEDS ARE NOT THE HOTTEST PART.

Are the seeds the hottest part?
Not really! The seed contain a small portion of capsaicin (the stuff that makes a pepper hot). The "hot" comes from capsaicinoids concentrated in the inner wall of the pepper and don't forget those white lines that run from top to bottom, these to contain small amounts of capsaicinoids.

ok, we all know the seeds are the hottest,, but... did you know, when you eat a pepper, try not to get it on your lips, it's much hotter when your lips touch it.
and if it's too hot, drink some milk to ease the heat.
