i need a potato dish and a vegatable i think. recipes would be heplful.

Baked potato, beans and a good salsa. Have it all the time. Beef or pork ribs.

This is a great potato salad and it's a bit different than your normal run of the mill mustard potato salad. It's delicious!

If this doesn't float your boat, we had these potatoes last night and they're AWESOME and so easy!!! I'm usually not a sweet potato fan, but I loved these.

Chipotle Smashed Sweet Potatoes Recipe
Alton Brown

2 large sweet potatoes, peeled and cubed
2 tablespoons unsalted butter
1 whole canned chipotle pepper in adobo sauce, chopped
1 teaspoon adobo sauce from can of peppers
1/2 teaspoon salt

Put cubed potatoes into steamer basket and place steamer into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Add butter to potatoes and mash with potato masher. Add peppers, sauce, and salt and continue mashing to combine. Serve immediately.



Also, if you do a creamy potato salad, try a cole slaw or a refreshing cabbage dish that's not creamy. This is a great recipe:

1/2 head cabbage, finely chopped
4 green onions, chopped
1 pkg. chicken flavor Top Ramen noodles, crumbled
1/2 c. sliced almonds, toasted
1 small pkg. sunflower seeds, toasted

Mix together except the noodles and refrigerate a few hours.

DRESSING:

2 tbsp. sugar
3 tbsp. vinegar
1/2 c. salad oil
1/2 tsp. pepper
Flavor packet from the noodles

Seasoned fries and sweet corn on the cob. Regular corn on the cob would also work, but I think the sweet corn flavor meshes perfectly with the taste of ribs.

I would personally boil the sweet corn in butter and water, but another wonderful way to cook the cobs is by rubbing the outside with butter and then wrapping each cob in foil and grilling them. Just make sure to rotate them every so often so they cook evenly and then the last 2-4 minutes take them out of the foil and put them directly on the grill rack. You don't have to do this part, but some like it that way. Leaving it in the foil the entire time is up to you.

Garlic mashed potatoes.

Boil 4 medium sized potatoes for 20 minutes until they're soft. Add in a liberal spoonful of butter, a 1/4 cup of milk and 2 cloves crushed garlic and mash it all up until creamy.

Steamed asparagus would go well as a vegetable, or sweetcorn.

4-5 red creamer potatoes
3TBS olive oil
1TBS kosher salt
1TBS spikes seasoning

quarter potatoes, place in a large bowl add oil and seasonings and toss. place into oven proof pan spred evenly. bake @350 untill brown& tender


pre shredded cole slaw And a coleslaw dressing of your choice Add celery seed to the slaw bout 1 TBS

Potato and Squash Side Dish
4-6 servings 1¼ hours 10 min prep

1-2 russet potato, peeled and cut in wedges
1 zucchini, peeled and cut in wedges
1 yellow squash, peeled and cut in wedges
1 white onion, peeled and in rings
4-5 slices of fried bacon, crumbled up
salt
pepper
Tony Chachere's Seasoning, is desired
1/2 cup butter or margarine, cut in slices

Preheat oven to 350.
In a 3-4 inch tall casserole dish layer as follows: potatoes, yellow squash, onion (2-4 rings per layer), seasonings, bacon crumps, butter wedges (4-5 per layer).
Repeat with zuchini squash replacing yellow squash.
Should have 2 complete layers or until you get to top of casserole dish.
Cover with tin foil.
Bake for 1 hour to an hour and 15 minutes.

Grandma's Sweet Potato Dish
12 servings 55 min 20 min prep

3 cups mashed cooked sweet potatoes
1 cup sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
2 eggs, beaten
1/4 cup margarine, melted
1/2 cup milk
Topping
1/2 cup flour
1 cup brown sugar
1 cup chopped pecans
1/4 cup softened margarine

Combine sweet potatoes, sugar, salt, vanilla, eggs, margarine and milk in a large mixing bowl.
Blend well.
Pour into a vegetable oil-sprayed 9"x13" pan.
Combine all topping ingredients in a medium bowl.
Stir well with wooden spoon or spatula until all ingredients are well incorporated.
Sprinkle over top of sweet potato mixture.
Bake in preheated 350 degree oven for 30-35 minutes, or until top is golden brown.

Is It a Baked Potato or Potato Salad?
16 servings 3¾ hours 3 hours prep

2 1/2 lbs potatoes, any variety you like
1 medium onion, medium dice
1 cup fresh parsley leaves, loosely packed then roughly chopped
1 cup sour cream
1 cup mayonnaise

Wash (DO NOT peel) your potatoes and cut them into approximately 1-inch thick wheels.
Cover wheels in a pot of water and boil until the potatoes are tender.
Drain and cool potatoes in a large mixing bowl.
When potatoes have cooled, combine all remaining ingredients in the bowl with the potatoes.
**If you want to season the entire batch before serving, consider including any combination of the following before mixing all the ingredients together - salt, pepper, lemon pepper, garlic powder. And remember a little bit of seasoning in the mix tends to go further than seasoning added to each serving.
If you are lucky enough, you will get everything evenly combined and still have some chunks of potato in the mix. If you don't, it still tastes great.
Cover and chill for at least two hours before serving. This can be made a day or two in advance of serving.
Prep time includes cooling the potatoes and chilling the salad. Cook time is split between cooking to potatoes and mixing the salad.

Friggione (A Side Dish of Potatoes & Tomatoes & Peppers)
4-6 servings 1¼ hours 10 min prep

1/4 cup olive oil
5 medium potatoes, cubed (approx 750g)
2 large onions
2 red peppers or green peppers (or one of each)
1 (420 g) can tomatoes seasoned with basil garlic & oregano (in NZ. I use a can of 'Italian Seasoned Tomatoes')
1 1/2 teaspoons salt
1 teaspoon sugar
fresh ground black pepper
2 tablespoons chopped parsley (optional)

Heat oil in large frypan. Non stick is best.
Cut the potatoes into 1cm cubes and slice the onions and peppers.
Add these to the hot oil and cover and cook over a moderate heat for 20 minutes, stirring several times, until the vegetables are tender and lightly browned.
Add the can of tomatoes and their juice.
Cook uncovered for 15-30 minutes until the mixture darkens in colour and the liquid has reduced so that there is only a small amount left around the potatoes.
Season to taste and sprinkle with the chopped parsley if using before serving.
Serve Hot or warm reheating if neccesary if your meat is not ready at the same time.
