I love the honey, but can't eat it all. I need a recipe that will use up lots of it.

This is Emeril's recipe, I've never tried this particular one but it's not hard to make at all. Just remember to thaw the phyllo according to instructions and try not to throw it around so that it doesn't bruise.

Archeologists have found honey in the Egyptian tombs from centuries ago and it was still edible. Honey does not go bad. It may crystalize, but just heat it up and it will return to the sticky liquid form. If you put sugar in your coffe or tea, use honey instead, it tastes just the same.

Honey never spoils, it simply crystalizes. You can warm it up to bring it back to liquid form. it is also much healthier than sugar, so I would use it as a sugar substitute, even in my coffee and surely my tea. I agree with kate make Baklava my grandma makes it and it is my personal fav!!! but its quite expensive with all the nuts and stuff...
