Is it possible to buy temporary car insurance on a daily or weekly basis? I know this is offered in the UK and you can purchase this type of insurance for driving into Mexico, but can you buy daily policies in the US? I have a car that I want to keep parked on my ranch and only drive a few days or weeks during the year and I don't want to pay for a whole year policy.

The shortest term you can buy in the US is a one month policy, through Leader Insurance. It's just not worth the insurance company's time and effort to issue a "daily" policy.

Keep in mind, though, if you ONLY drive the vehicle on your ranch, you don't NEED to have it insured - only if you drive it on public roads.

If you own the car, you can just have comprehensive coverage (covers fire, theft, vandalism, etc.) as long as the car is parked and you don't drive it. If you need to drive it occassionally, you should be able to call your insurance agent ahead of time and ask that liability be put on the policy.
