Let me know what I can make with this. Prefer something relatively easy with typical ingredients, and 'baked' as opposed to fried, if possible. Any suggestions? This was sort of an impulse purchase made on a weekly grocery shopping trip (fillets were on sale). Thanks

You can mist the fillets with olive oil (like a plant mister bottle) coat them in crushed cornflakes,paprika, lemon pepper a little dalt and some dill weed bake them at 350 degrees till the meat is flaky probably about 30 min.

place fillets in shallow baking dish paint with garlic butter (add some dill to the garlic butter if you like) splash with red wine place under broiler till fillets flake with a fork. garnish with lemon slices and parsley or coursely chopped chives.

I love perch. this a recipe i use in restaurants where i work. it involves cod but perch is an easy substitute. stuffed perch: serves 6 stuffing: 2 qt. volume plain bread any flavor/diced 1/4 cup ritz cracker crumbs 2cupd clam juice 1/4 cup each minced red pepper,onion, celery 1/4 cup cheddar cheese 1/4 lb cooked popcorn shrimp 1 large portabella mushroom pureed salt to taste 1tsp each white pepper, garlic powder,chili powder mix ingredients form into 6 balls and par bake @ 300*F for 20 min. 12 ocean perch fillets. when stuffing is done pullfrm oven and while still hot cover each ball with 2 fillets skin down place 1 pat of butter on each stuffed perch sprinkle with a little cheddar cheese and color with paprika. place back in oven and cook at 300*F for about 20min or until fish is done. instead of tartar use a dill and garlic sauce using mayo as the base

OCEAN PERCH FILLETS WITH DIABLO SAUCE

1 (16 oz.) pkg. frozen perch fillets
1 tsp. seasoned salt
1/4 tsp. seasoned pepper
2 tbsp. butter
1 slice dry white bread, crumbled
1/3 c. chili sauce
1 1/2 tsp. lemon juice
1/2 tsp. Worcestershire sauce

Preheat oven to 350 degrees. Grease shallow baking dish; arrange fillets in dish and sprinkle with seasoned salt and pepper.
In small skillet over medium heat, melt butter. Stir in bread crumbs; sprinkle over fish. Bake 15 minutes or until fish flakes easily when tested with a fork.


SAUCE:

In a cup, combine chili sauce, lemon juice and Worcestershire sauce. Serve with fillets. Makes 3 servings.

Parmesan-Basil Perch:

4 fillets

2 tablespoons dry breadcrumbs
2 tablespoons grated parmesan cheese
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
1/2 teaspoon paprika
1 dash pepper
1 lb ocean perch (or other lean fish filets)
1 tablespoon margarine, melted
1 tablespoon chopped fresh parsley

1. Move oven rack to position slightly above middle of oven.
2. Heat oven to 375 degrees. Spray rectangular pan,13 x 9 x 2 with cooking spray.
3. Mix all ingredients except fish, margarine, and parsley.
4. Brush one side of fish with margarine, dip into crumb mixture.
5. Place fish, coated sides up, in pan.
6. Bake uncovered 15 to 20 mins, or until fish flakes easily with fork.
7. Sprinkle with Parsley!

Baked Ocean Perch
4 servings 15 min 5 min prep

1 lb frozen ocean perch
salt
black pepper
3 tablespoons spring onions, minced
2 tomatoes, quartered
1/4 teaspoon basil
1/2 teaspoon sugar
1/4 cup melted butter

Thaw and separate fillets.
Remove skin and place on a buttered baking dish.
Salt and pepper to taste.
Sprinkle with the spring onions.
Blend tomatoes, sugar and basil, spread over fish.
Drizzle with melted butter.
Bake at 450F for 10 minutes.

Perch Fajitas With Pineapple Salsa
4 servings 28 min 20 min prep

1 teaspoon lemon pepper
1/4 teaspoon ground cumin
1/4 teaspoon salt
6 tablespoons lime juice, divided
1 1/2 lbs perch fillets, skinned and cut into 1/2-inch strips (you may sub tilapia,or for a vegetarian version, use Worthington Scallops)
1 cup chopped fresh pineapple (may sub canned)
1/4 cup diced red onions
1/4 cup diced red bell peppers
1/4 cup diced green bell peppers
2 tablespoons jalapenos, seeded and chopped
2 tablespoons fresh cilantro, chopped
4 (10 inch) tortillas, warmed

Combine lemon pepper, cumin, salt, and 4 tbls. lime juice in a resealable plastic bag; add fish. Seal and shake; chill 20 minutes.
Combine pineapple, bell peppers, jalapeno, cilantro, and remaining lime juice in a medium bowl; set aside.
Grill fish, covered with grill lid, on a grill rack coated with nonstick cooking spray over medium heat 4 to 6 minutes on each side or until fish flakes with a fork. You may broil if you wish instead of grilling. If using vegetarian scallops, heat under broiler, turning once or twice).
Arrange fish and pineapple mixture evenly down center of warm tortillas; fold. Serve and enjoy!

Greek Baked Ocean Perch
Taste the Mediterranean in this dish’s tomato, onion, and garlic sauce. A heart healthy recipe.
2 servings 25 min 10 min prep

1/3 cup onions, finely chopped
2 tablespoons olive oil
2 garlic cloves, minced
1/4 cup dry white wine
1/8 teaspoon dried thyme
1/8 teaspoon dried oregano
1 (16 ounce) can whole tomatoes, drained, chopped fine (reserve 1/4 cup liquid)
3/4 lb ocean perch fillets
1/4 cup kalamata olives, pitted, chopped
1/3 cup feta cheese, crumbled

In a skillet cook onion in oil over moderately low heat, stirring, until it is softened. Add garlic and cook, stirring, 1 minute.
Add wine and boil the mixture until almost all the liquid is evaporated. Add the thyme, oregano and tomatoes with reserved liquid, bring mixture to a boil, and cook it over moderate heat, stirring occasionally, 5 minutes, or until it is thickened slightly.
Spread half the sauce in the bottom of a gratin dish just large enough to hold the fish in one layer.
Top it with the perch, skin sides down and spread remaining sauce over perch.
Sprinkle olives and Feta evenly over the sauce and bake 15 to 20 minutes at 400 degrees F. or until fish just flakes when tested with a fork.
