should the inner heart of garlic be retained and cooked or not? some discard it, some keep it, any benefit either way?

I use all but stems. Its the best.

All parts of garlic should be used. There's no point discarding any of it as it's the best food in the world. No jokes! It's an antibiotic, a blood thinner, an antiseptic..... the list goes on. Oh, just discard the skin, that can be kinda tough lol.

Yes of course. My family eats lots of garlic. We just put it in a garlic press and then add a tablespoon to it and dip bread in it like some Italians do.
