Down here in Louisiana we get to water to a very hot boil, add lemon, onion, and enough crab/shrimp boil per pounds of shrimp. Once this comes to a rigorous boil then add your shrimp. Shrimp cook very fast! Approx. 5 mins will be quite enough but you can check the shrimp by looking at the shell..if it is slightly coming away from the meat it is done. Should have a nice pink coloring. Immediately turn the boil off. Place ice in the water to cool it down as to stop the cooking process. Do this for only a few minutes then drain the shrimp. If you don't have access to crab/shrimp boil then use Cajun seasoning and some extra cayenne to taste. Also a couple of bay leaves will add a really good taste. Cajun Boiled Shrimp:

25 min 20 min prep
4 servings

2 1/2 lbs medium shrimp, unshelled
1/2 cup salt
1 gallon water
Shrimp Boil Spice
4 tablespoons celery powder
3 tablespoons cayenne pepper
2 tablespoons dry mustard
1 tablespoon mace
1 tablespoon powdered ginger
2 tablespoons paprika
3 tablespoons bay leaf powder
2 1/2 teaspoons ground coriander

1. Mix spices well; store in dry place in a tightly covered container; will keep for one month.
2. Add salt and shrimp boil spice to the water and bring to a rolling boil.
3. Add the shrimp, stirring, and boil for 3 minutes or until shrimp is pink and opaque.
4. Mushy shrimp is undercooked; tough shrimp has been overcooked.
5. Drain immediately, and run under very cold tap water or chill with ice immediately to stop cooking process.
6. Refrigerate until ready to use.
7. Shrimp boiled like this can be served in the shell, as an appetizer or main dish, or it can be shelled and used in salads and other dishes.

I'm originally from South Carolina and down there we make a boiled meal called "Beaufort Stew". I won't give you any specific quantities, because it varies depending on how many people you want to feed. It consists of shrimp, smoked sausage, corn on the cob and new potatoes ("b" size red potatoes).

Basic preparation:

Boil water and Old Bay seasoning in a LARGE pot.
add the potatoes to boiling water and cook for 5 minutes or so before adding 2 in. pieces of smoked sausage. When the potatoes START to get tender, add corn on the cob (I like Green Giant Nibblers - 3 in cobs). Allow to cook another 5 minutes and then add your shrimp. At this point, I usually put a lid on the pot and turn in off until the shrimp are nice and pink. The ingredients are added in this order due to cooking times.

This meal is great for outdoor parties during the summertime. Drain off the water and if you have a picnic table cover it with newspaper and dump the "stew" into the middle of the table. We usually have paper plates, fresh cut lemon, hot sauce and cocktail sauce on the table.

For a small amount of shrimp (2 pounds or less) use a tall skinny pot...place a couple tablespoons of Old Bay seasoning in the pot, slice up a lemon, add a bottle of beer and a half cup of water and then put a veggie steamer basket in the pot. Place the cleaned, rinsed shrimp on top of the steamer basket and put the top on the pot.

Boil/steam them on medium/high for 2 or 3 minutes, give the shrimp a quick toss to mix them up good and let them stream another minute.

Take them out of the hot water and the pan and serve warm, drizzled with melted butter which has been mixed with some Old Bay.

Or immediately drain them and spread them out on a big pan so they cool quickly and serve them with cocktail sauce as peel & eat.

I always prefer to steam the shrimp. Use a steamer and follow its directions for time. Use a pot of water and a steam basket.
I always liked to make a pouch of aluminum foil, and put the shrimp in cleaned, add butter of your choice, seasonings of your choice, fold the pouch closed, and heat on a grill. Makes some of the best steamed shrimp. Steams the butter right in, and you have dipping sauce made to boot.
