Gyro Burgers:

2¼ hours 2 hours prep
4 servings

3/4 lb lean ground lamb
1/2 lb lean ground beef
1 cup fresh breadcrumbs
1/2 cup minced onions
1 clove garlic, minced
1/2 teaspoon ground allspice
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 1/4 teaspoons salt
1/2 teaspoon ground black pepper
2 tablespoons red wine vinegar
1/2 teaspoon dried oregano
1/3 cup olive oil
4 plum tomatoes, chopped
1 small onion, slivered
1 small cucumber, seeded & chopped
1/2 head romaine lettuce, shredded
1 cup tzatziki, homemade or purchased
4 pita pockets

1. In a bowl, combine lamb, beef, bread crumbs, minced onion, garlic, allspice, coriander, cumin.
2. Add just 1 tsp of the salt and 1/8 tsp of the pepper and mix well.
3. Form into 4 patties, cover and chill 2 hours.
4. In another bowl, whisk together vinegar, oregano, 1/4 tsp salt, and 1/8 tsp pepper.
5. Gradually whisk in the oil until blended well.
6. Add tomatoes, sliced onions, and cucumbers and stir to coat.
7. Cover and let marinate at least 2 hours (no more than 8 hours).
8. When you are ready to cook your burgers, oil& preheat your grill and grill as you would any hamburger (10-15 minutes or so- or until no pink remains but burger is still moist).
9. When burgers are fully cooked, slit pita pockets open on the sides to form open pockets (you can warm the pita up by setting on the side of grill briefly) and place a burger inside.
10. Have bowls of the tomato topping, the shredded lettuce, and some tzatziki(a Middle Eastern style yogurt sauce) on the table for guests to add as desired.
11. The yogurt sauce is available in the dairy case near dips or at the deli counter or some markets or you can prepare a homemade version.

Sure, just take a bunch of steaks and impale them on a spit, then use it in your rotisserie.
Marinate the steaks with different things and spices so you have a range of tastes

Beef Gyros in Pita
4 servings 20 min 10 min prep

1 lb beef round tip steaks, cut paper thin
2 cloves garlic, minced
1 teaspoon dried oregano
3 teaspoons olive oil
crumbled feta cheese
salt and pepper
4 pita breads, cut in half,warmed
2 small plum tomatoes, thinly sliced
very thinly sliced red onions
1/2 cup prepared cucumber ranch dressing

Stack beef steaks; cut lengthwise in half, then crosswise into 1-inch wide strips.
Toss with garlic and oregano.
Heat 2 teaspoons oil in large nonstick skillet over medium-high heat until hot.
Add 1/2 of beef; stir-fry 1 minute or until outside surface of beef is no longer pink.
(Do not overcook.) Remove.
Repeat with remaining beef.
Return beef to skillet; heat through.
Season with salt and pepper.
Serve in pita pockets with tomatoes,onions, Feta cheese, and dressing.

Cucumber Sauce for Gyros
I tried different sauces but didn't find the taste I was looking for so I threw some stuff together and I was very happy with the results...If you try it and tweak it, let me know...I especially liked it with Gyro Gyro Meat...

6 tablespoons sour cream
1 tablespoon mayonnaise
1/2 teaspoon garlic powder
1/2 tablespoon lemon juice
1 large cucumber (peeled and finely chopped)
1 pinch salt (to taste)
1 pinch pepper (to taste)

Add 1st five ingredients and mix well --
Add salt and pepper to taste --.
Refrigerate for a couple of hours prior to using --
Sauce is a little thinner than some but spreads nicely on flatbread --.
Add gyro ingredients and roll up --
A turn or two in the food processor would yield a nice smoothe sauce -- .

Big John's Gyros/Donair Sauce
If you like donairs then this sauce IS the one you want... Trust me.
2 1/2 Cups 5 min 5 min prep

1 can evaporated milk, chilled
1 can condensed milk, sweetened,chilled
2 cloves garlic, minced very fine or 2 tablespoons garlic powder
4 tablespoons vinegar
1 teaspoon onion powder

Combine milks with onion powder and garlic together in a medium bowl.
Add vinegar and stir just until mixture thickens.
Refrigerate until ready to use.

Gyros (as close as you can get without the spit!)
Gyros ("yeeros" in Greek) is made with compressed meat,consisting of various cuts of beef that are chopped, minced or ground,then shaped into a cylindrical shape, and roasted on a vertical skewer. This is a good substitute for the commercial gyro.

1/2 cup dry red wine
2 tablespoons olive oil
2 teaspoons minced garlic
1/2 teaspoon dried oregano (rub between your fingers)
1/2 teaspoon salt
1 dash pepper
1 lb flank steaks
1 tablespoon butter or margarine
4 pita bread rounds
3 cups lettuce, chopped
1 cup peeled diced and seeded tomatoes
1 cup peeled diced and seeded cucumbers
1 cup plain yogurt (drained)

Combine wine, oil, garlic, oregano, salt and pepper.
Cut steak across the grain into slices as thin as possible.
I use the Chinese trick of putting the meat in the freezer and partially freeze so that it will slice easier.
Pour wine marinade over meat strips, refrigerate and marinate for at least 1 hour.
Drain strips.
Add butter or margarine to saute' pan.
Add meat, in two batches, and saute' until brown on both sides.
Remove to serving platter and keep warm.
Wrap pitas in damp paper towels and microwave until very warm.
Open one end of each pita to make pocket.
Set out lettuce, tomato, cucumber, and yogurt.
Let each person make his own.
Tips: If you are lucky enough to have a Middle Eastern food store around,ask them for Lebne (pronounced"leeb nee") and use in place of the drained yogurt.
It is much richer and creamier.
Or make your own Tzatziki (cucumber, garlic, yogurt dip).
