It can be several dishes or just one. I am only cooking for myslef, but I can always eat leftovers or share with my roommate

Here are some of my favorites:

BBQ Beef Pot Pie

2 lbs Ground Beef
8 oz pkg frozen or 1 (15 oz) can mixed vegetables, drained
2 cans refrigerated biscuit dough
1 bottle (12 oz) Bullseye BBQ sauce

Preheat oven to 350 degrees F.
Crumble ground beef into skillet and cook until no longer pink. Drain fat from beef and discard.
In a 9x13x2 pan, combine cooked beef, mixed vegetables, and BBQ Sauce. Top with refrigerated biscuit dough.
Cover with foil and bake at 350 degrees F for approximately 30 minutes or until biscuits are done.

*Some variations on this might include using left-over shredded roast beef in place of the ground beef, gravy in place of the BBQ Sauce, or Bisquick or mashed potatoes in place of the refrigerated biscuit dough.

Meatloaf

1 pound ground beef
1/2 cup finely chopped onion
1/2 cup dry bread crumbs
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon worcestershire sauce
8 ounces can tomato sauce, divided
1 egg
2 tablespoons vinegar
1/4 teaspoon dry mustard
2 tablespoons brown sugar
1/2 cup water

Mix together meat, chopped onion, bread crumbs, salt and pepper, egg and 1/2 cup of the tomato sauce. Form into a loaf; place in a baking pan. Mix together remaining tomato sauce, vinegar, mustard and sugar; pour over meat loaf; pour water into pan. Bake in a preheated 350° oven for about 1 hour, until done.


Hamburger pizza

1 lb hamburger
1 box of pizza (flour mix for dough, pizza sauce and Parmesan)
1 pkg of Mozarella cheese
diced onion
diced green pepper
1 pkg pepperoni
fresh sliced mushrooms or 1 small jar of mushrooms
garlic powder and Italian seasoning

Prepare pizza dough according to directions. While it's rising, brown and drain hamburger. In another pan or in the microwave, cook the onion, mushrooms,and green peppers until soft. Add the veggie combo to the hamburger as well as the seasonings (to suit your personal taste.) Simmer for 5 minutes. Spread the pizza dough on the bottom of a casserole dish. Alternate layers of the following: meat, Mozarella, pepperoni, and pizza sauce. End the layers with the pizza sauce and a sprinkling of Parmesan. Bake at 425 degrees for approx. 20 minutes.

Catalina Chicken

1 pound boneless breast
1 bottle catalina dressing

Pace chicken in baking pan. Pour dressing over chicken. Cover with aluminum foil. Bake in 400 degree oven for about 1/2 hour (depending on your oven) or until chicken is done.
I serve this with mashed potatoes and a vegetable or salad. We use the dressing from the chicken as a gravy for the potatoes.

Soups are really good this time of year. I buy those glad plastic bowls to store the extra in....it's great to freeze and have some future meals are ready to thaw and heat.

The sausage gives this soup a rich flavor. Everyone always asks me for this recipe.

Zinfandel Minestrone
Serve with French bread


1 pound hot Italian sausage
1 pound mild Italian sausage
1 chopped onion
3 carrots, chopped
1 zucchini, sliced
4 cloves garlic, chopped
3 quarts chicken broth
2 cans diced tomatoes
2 cans cannelloni beans, rinsed and drained
1 tablespoon dried basil
¼ cup Zinfandel
2 cups large shell-shaped pasta
Salt and pepper to taste
1 cup fresh grated parmesan cheese

1. Squeeze sausages from casings into a large pan. Cook until brown and crumbly, approximately 10 minutes. Discard fat.
2. Add carrots, onion, zucchini, and garlic. Cook for about 6 minutes until onions are soft.
3. Add chicken broth, tomatoes, beans, basil, and Zinfandel. Bring to a boil.
4. Add pasta. Reduce heat and simmer, covered, for about 10 minutes until pasta is tender.
5. Add salt and pepper. Serve into bowls and top with parmesan cheese.


This will make 12 servings.

You can cut the ingredient in half good serving for to go share it with your roommate and tell him the next meal he get's to buy.

Chicken breasts, pounded, enough for 6
servings
2 boxes frozen broccoli spears
(defrosted)
2 cans cream of chicken soup
3/4 c. mayonnaise
1 tsp. curry powder
3/4 c. shredded Cheddar cheese
Bread crumbs
Melted butter

Grease large oblong dish. Put in chicken and defrosted broccoli spears. Mix soup, mayonnaise, curry powder and pour on chicken and broccoli. Top with Cheddar cheese, bread crumbs and melted butter. Bake at 350 degrees for 45 minutes to 1 hour. Serves 6. Baseball Official

Good ol' baked chicken breasts (or the cheaper cuts) I buy in bulk for a better price (8 or so) then bake 'em off & have a wonderful dinner that night. The leftovers can be used in casseroles, salad, soups, sandwiches or just a nosh at the kitchen counter! YUM!

Chicken in sauce over pasta

Hears what you do:
Cube some chicken breasts or thighs
put a little bit of oil in a pan over medium heat and cook your ckn in it. when the chicken is done put in your favorite cream of __________ sauce. Be creative and mix and match. if its to thick add some water, but just a little. Boil up your favorite kind of pasta and put the ckn and sauce over it. Bonaparte!

Another easy one is spaghetti

if you don't want to make a mess then

brown some ground beef or turkey, add in an already made sauce and put over cooked spaghetti

the already MADE sauces ARE THE BEST AND EASIEST!

roast beef, potatoes and carrots around the meat, gravy made after all is cooked. Slice of bread or a dinner bun. Beverage of choice. Sliced pineapple for dessert.
