coriander is a seed that can be ground or when you plant it it will give you cilantro. You can you both in mexican dishes, and they have a slightly different taste.

You are fortunate to have this herb growing for you. I love the leaves, which are cilantro. You can add it to salad, sauces and various other ways. Cilantro is used a lot in Mexican and Spanish cooking and gives everything a fresh, lovely taste. Coriander is the seed part and is usually used ground. The leafy part of the plant is called Cilantro or 'Mexican Parsley' and it's really good! You can find a ton of recipes using this at http://recipesofmexico.blogspot.com and http://recipesforsalsas.blogspot.com

We use coriander/cilantro a lot in Cyprus. The green leaves are used for salads. It has a pungy taste. We like to make a sald of cilantro leaves with boiled and sliced beetroot, and dress the salad with virgin olive oil and wine vinegar.
Coriander seeds are crushed and added to crushed green olives to give a sharp nice aroma to them. Traditionally we dress crushed green olives (tsakisdes/tsakisto) with coriander seeds, garlic cloves, lemon juice, and olive oil.

Coriander is also known as cilantro. We are most familiar with it in Mexican food, but it is widely used around the world...like asian & middle eastern cuisines.
