The way to avoid cracking the shell is to peel the eggs while they are still slightly warm. THen store the edible part of the eggs in a tupperware container in the fridge.

OK when you hard boil an egg you put it in freezing cold water and the on a stove on High. When the egg/water starts to boil you time it for 5 minutes. When 5 minutes is up you put on a lid and take it off the heat an let it stay off the heat for 15 to 20 minutes. remove the lid and place the pot full of water and eggs under a running sink with cold water until the water in the pot is cool. take out an egg and if you have trouble peeling it run it under hot water!

From COOKS.com

EASILY PEELED HARD BOILED EGGS

If possible, use eggs that have spent at least 1 night in the refrigerator. Remove and let them warm to room temperature.
Bring sufficient water to a boil and add room temperature eggs to the water using a tablespoon so as not to crack them.

Boil eggs 15 to 20 minutes vigorously.

Drain water from the eggs in a sink and, with the lid of the container held on, bounce the eggs like one would while popping corn with sufficient force to crack the eggshells. Remove the lid, and immediately flush cold tap water over the eggs. Peel and be surprised how easily they peel without breaking the whites.

PS - I find that the fresher the eggs are the harder they are to peel. If you can purchase the eggs at least a week in advance seems to help. To keep the egg white white - add some vinegar to the boiling water.

From Wikepedia:
The membrane and shell of fresh chicken eggs cling to the egg white when it is hard-boiled, making it nearly impossible to de-shell/peel. This is a common problem with an easy solution. Simply add a couple tablespoons of salt to the water when you boil your eggs and your eggs will peel easily!

Good luck and no matter what - happy eating!

The right way to hard boil an egg is to NEVER BOIL IT!!!!

Most people overcook eggs. If an egg will poach in water in 2 minutes, why would you boil one for 15?

Take your eggs and set them completely covered in water and let them get close to room temperature. Then, bring the water just to a boil, cover, remove them from heat, and let them sit for 10 minutes.

(Of course, you have to cool them off before you peel them. Soak them in cold water or a little time in an ice bath works well, but don't over chill, or they will be harder to peel.)

What you will get is an egg cooked all the way through, but the yellow yolk doesn't turn green from being boiled.

Hint. If you are making devilled eggs or other things, older eggs peel easier after boiled and cooled. Fresh eggs are almost impossible to peel.

(I guess I forgot to mention this works well in Florida. If you live in higher altitudes, "your mileage may vary" :-) In higher altitutes, if you notice the eggs not done through the middle, I would leave the eggs on no longer than 1 minute and consider more rest time. But, if your yolks turn green on the outside, you cooked too long.)

(Down thumb me? Well, I suggest you try it, unless you like green eggs with your ham!!!)

Put eggs in a pot with enough water to cover them, bring to a boil and cook for 5 min, take out and run cold water over them. Let them cool and then peel. . . .BTW overcooking makes the yolk black on the outside.
If you put the eggs into already boiling water, there is a good chance they will burst. . . no good results

Use older eggs, not the freshest. Put them in a pot, cover with cold water, bring to a boil, and then time for 15 minutes. Drain and give the pan a few good shakes to crack them while running cold water over them. Let that sit for 10-15 minutes. The shells will slip right off.

put them in cold/icey water after boiling for 15min... pull the egg away from the shell (most of the time.)
