The only way you'd embarrass your sister is by telling some secret that she wanted kept a secret or by talking about any of her ex's.
That is a wedding no no.
I've been to alot of weddings and there is nothing worse than having someone stand up stammering while looking down reading something. Talk about impersonal. Why do it?
The best advise is for you to write something short and from the heart. Practice in front of a mirror til you have it memorized and
you're comfortable with what it is you're saying. Then at the wedding, just take a deep breath...look at her and her husband and speak from the heart. That's all anyone wants or expects.

I had to make a similar speech at my sister's wedding. I talked a bit about the first time I saw them together (at my cousin's wedding ... even then, just watching them together on the dance floor, everyone *knew* ... you know?) and then quoted from "My Big Fat Greek Wedding." ("You ever hurt my sister, I'll kill you and make it look like an accident.")
Make them laugh, make them cry, keep it short. That will work.

Love is not jealous or conceited.
Love is not proud or selfish...
It continues on for a few more lines.
It's perfect for a wedding.

dictate what is inside your heart. look her in the eyes as you speak. don't be self-centered...for that's all shyness really is.
It is her moment, not yours.
