I'd like to use shortening as I am all out of vegetable oil

Shortening will work just fine. Melt it a little first since the recipe called for a liquid. It will be easier to blen in that way.

It's not as good and doesn't taste as good, either. I've tried oil when I'm out of shortening. Margerine or butter is a much better choice.

shortening will give you a fluffier cake actually. the veggie oil makes cakes dencer (if that's even a word lol) i always thought. btw i'm having carrot cake for my birthday!! yeaaa!!

Sure you can, but you may have to adjust how much you use for the recipe.
