INGREDIENTS
1 cup milk
1 egg
1/3 cup vegetable oil
2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup white sugar
1/2 cup fresh blueberries
1/2 cup fresh grated carrots
DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C). Line a 12-cup muffin tin with paper liners.
In a large bowl, stir together milk, egg, and oil. Add flour, baking powder, sugar, carrots and blueberries; gently mix the batter with only a few strokes. Spoon batter into cups.
Bake for 20 minutes. Serve hot
another one I love is blueberry, carrot and cream cheese!
INGREDIENTS
2 cups biscuit/baking mix
14 tablespoons sugar, divided
2 eggs
1 cup sour cream
1 cup fresh or frozen blueberries
1 cup grated carrots
DIRECTIONS
In a bowl, combine the biscuit mix and 3/4 cup sugar. In another bowl, combine the eggs and sour cream; stir into the dry ingredients just until combined. Fold in blueberries and carrots. Fill greased muffin cups three-fourths full. Sprinkle with remaining sugar.
Bake at 375 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

hm, this is a blueberry carrot cake recipe that I use..it is SO delicious...I have always made it as a cake but I can't see why you couldn't just make it as muffins! hope this helps!
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup sugar
1/2 cup brown sugar
4 large eggs
1 cup canola oil
4 medium carrots, peeled and grated
2 cups fresh blueberries or frozen blueberries
1 cup coarsely chopped walnuts
Preheat oven to 350 degrees.
Butter and flour a 10 cup bundt pan.
Mix the first 5 ingredients in a medium bowl.
Combine both sugars in a large bowl.
Add eggs one at a time, whisking until smooth.
Whisk in oil.
Stir in the carrots and then fold in the blueberries.
Do not over mix-- batter will the thick.
Spoon the batter into the prepared pan.
Bake about 1 hour until cake begins to come away from the edges of the pan.
Cool cake in pan for 20 minutes.
Invert onto plate and let cool completely.
I have also cut this recipe in half and used a square cake pan with equally good results.

blueberry muffins
* 1/2 cup butter
* 1 1/4 cups white sugar
* 2 eggs
* 2 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/4 cup milk
* 2 1/2 cups fresh blueberries
* 1/4 cup white sugar

2 tbsp. Bran
1 c. whole wheat pastry flour
2 tbsp. wheat germ
1 tsp. soda
1/4 tsp. baking powder
1 tsp. cinnamon
1/4 c. oil
1/4 c. honey
1 egg
Put all ingredients in a bowl and mix.
1/2 c. buttermilk or sour milk
1 tsp. vanilla
1 c. banana or substitute bananas for 1/2 blueberry, peaches, currants, raisins, grated carrots
Bake at 425 degrees for 25 minutes. I double batch and freeze them and take out as needed. I made the big ones. Their so good and moist.
