Cooking never removes all the alcohol, but usually what is left is not a problem, even to serve to a child, if cooked properly and long enough. Depending on how and how long you cook it, the product can still contain 5-85% of the original alcohol.
Where you sould be concerned is if anyone in your family is taking antabuse to fight an alcohol problem. ANY alcohol can cause a violent reaction, to include vomiting. That is the purpose of antabuse. I have even heard of people who take antabuse that had a reaction to mouthwash or perfume or cologne.
If anyone in the family is taking antabuse, stay away from all forms of alcohol in any food products, and if you are not cooking it over high heat, consider other forms of flavor, as suggested by the Food Network.

When doing any form of cooking with alcohol it is the normal practise to brown what ever meat you are using and then add a glug of alcohol, IE, wine and then continue to cook until the liquor is reduced to half that you started with.
If you do this then the alcohol is cooked off and you are left with a flavour filled stock to build the rest of your recipe on.

Alcohol evaporates at 70 degrees whereas you are cooking your stew at around 100 so it will evaporate off. The length of time it takes depends on the volume of alcohol and the rate of evaporation.

If you cook anything with alcohol in it the alcohol should be gone in just a few minutes. Alcohol boils away at about 170ºF and water boils at 212º. By the time the pot or pan has come to a boil most of the alcohol will almost be gone.
