Most banana breads call for at least 4 very ripe bananas. Perhaps you could make the recipe cut in half?

http://allrecipes.com/Recipe/Banana-Banana-Bread/Detail.aspx You can substitute 1 cup of the white flour with whole wheat flour which will increase its nutritional value. I would add cinnamon just for a little more flavor. have fun. Sometimes, I freeze overripe bananas for future use. Have fun.

These are banana cookies. they are not only really healthy but they are also delicious and easy to make!
INGREDIENTS
2 very ripe bananas
2 cups rolled oats
1 cup dates, pitted and chopped
1/3 cup vegetable oil
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet.
Bake for 20 minutes in the preheated oven, or until lightly brown.
If those don't appeal to you...another suggestion is to make banana pancakes!
This is one of my favorite breakfasts...they are oatmeal raisin banana pancakes! Also a healthy chocie!
1 cup old fashioned oats
1 cup all-purpose flour
1/4 cup packed golden brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
3/4 cup plain yogurt
3/4 cup milk
2 large eggs
1/2 teaspoon vanilla
2 ripe bananas, mashed
1 cup raisins
1/4 cup unsalted butter, melted
additional melted butter
Whisk together first 6 ingredients in medium bowl.
Whisk yogurt, milk, eggs, and vanilla in another medium bowl to blend.
Whisk dry ingredients into yogurt mixture just until blended.
Fold in mashed bananas, raisins, and 1/4 cup melted butter.
Brush nonstick griddle or skillet with melted butter; heat over mediun heat.
Working in batches, pour batter by 1/3 cupfuls onto griddle.
Cook pancakes until bubbles form on top and bottoms are golden brown, about 2 minutes.
Turn pancakes over cook until bottoms are golden brown.
about 2 minutes.

Banana Bread made with whole wheat flour, and substitute 1/2 of the sugar with applesauce. (sounds weird,tastes great!)

a smoothie :)
add the bananas, a bit of fat free strawberry yougurt and a splash of pineapple juice.
Or, if you prefer, you can take the smoothie mix and do two other things... pour into an ice cube tray and make smoothie cubes and pour them into a glass of cold milk or juice, or stick popcicle sticks in the tray and make small smoothie pops.
