An omelet, by definition, contains eggs. Or at least some portion of the egg.
Your question is like saying: I like the concept of sushi, but hate rice and fish. I like the concept of a clean house, without the dusting.

Eggless Omelets
(from “Vegan Vittles” by Joanne Stepaniak)
3/4 cup whole wheat pastry flour
2 Tablespoons Red Star Vegetarian Support Formula nutritional yeast flakes
1 teaspoon non-aluminum baking powder (such as Rumford)
1/4 teaspoon salt
pinch of turmeric
scant 1 cup non-dairy milk
1/2 teaspoon canola oil
additional canola oil, as needed for cooking
1. Place the flour, nutritional yeast flakes, baking powder, salt, and turmeric in a medium mixing bowl, and stir them together until they are well combined.
2. Pour the milk and oil into the dry ingredients (from step #1). Stir well using a wire whisk to make a smooth batter. Let the batter rest for 5 to 10 minutes, then stir again.
3. Mist a 9- to 10-inch skillet with nonstick cooking spray, and place it over medium-high heat. When the skillet is hot, pour 1/3 cup of the batter into it. Immediately tilt and rotate the skillet to distribute the batter evenly and create a 5-inch or 6-inch round.
4. Cook the omelet until the top is completely dry, the bottom is a deep golden brown, and the edges start to curl up slightly. Flip and repeat.
Make sure you add a thin layer of canola oil to the skillet before cooking additional omelets.
Makes 4 omelets.
Western Eggless Omelet:

Tofu is transformed into a remarkable eggless omelet. Low in cholesterol and easy to prepare, this omelet is delicious with cooked potatoes, vegetables and flavored with vegetarian sausages.

Basic Omelet
• 6 ounces firm tofu (1 cup crumbled and well drained)
• ¼ cup milk
• 1/8 teaspoon (scant) salt
• Dash of black pepper
• 1/8 teaspoon (scant) ground turmeric
• ½ tablespoon butter
Filling
• ½ tablespoon butter
• 2 tablespoons chopped onion
• 2 tablespoons diced cooked potato
• 2 tablespoons chopped green or red pepper
• 2 tablespoons chopped fresh mushrooms
• 1 vegetarian sausage sliced
• Shredded cheese for top
1. Process all ingredients except butter in a blender until smooth. Preheat oven broiler.
2. Melt butter in a 7 or 8-inch nonstick skillet or omelet pan. Briefly sauté onion, diced potato, green or red pepper, mushrooms and vegetarian sausage.
3. Season lightly with salt and pepper.
4. In a second non-stick skillet melt butter. Pour in tofu batter and spread evenly with a spatula. Cook without stirring over medium heat for a few minutes until the edges are set but not brown.
5. The batter will bubble up as excess liquid evaporates. Remove from burner and place under preheated broiler for 2 to 3 minutes until the top is set and has just a hint of brown.
6. Remove from broiler and add filling to one half of the omelet.
7. Using a spatula, carefully fold other half of omelet over the filling. If it breaks smooth it with the spatula. Spread top with butter or sprinkle shredded cheese over top.
8. Place under broiler again for 1 to 2 minutes until golden brown. Serve at once.

2 oz of soft tofu can be blended with some water and substituted for an egg to add consistency. Or try the same quantity of: mashed beans, mashed potatoes, or nut butters.

I don't think it'd be an omlet then. but, you could put the ingredients into a wrap and grill it and that'd work
