You need a salad shooter or other device to slice the potatoes very thinly.
Take about 1 1/2 potato per serving, sliced thinly, and soak it in ice cold water for 15 minutes. This helps crisp them up.
Drain the potatoes on paper towels.
It helps to use parchment paper on a cookie sheet, but a plain cookie sheet can be used, as well.
Spray any "Pam" type veggie oil spray on the potatoes, then sprinkle with seasoning salt & pepper.
Bake at 450 F for about 10-11 minutes.
Test for crispness.
Enjoy.
Good luck.

BAKED POTATO CHIPS

3 1/2 lbs. red or white boiling potatoes
6 tbsp. butter, melted
Salt & pepper

Cut potatoes crosswise into 1/8" thick slices. Position oven racks in upper and lower third of oven, and preheat to 500 degrees. Lightly grease 2 baking sheets. Arrange potato slices in single layer on sheets. Brush generously with butter. Bake 7 minutes. Switch pan positions and continue baking until potatoes are crisp and browned around the edges, about 7 to 9 minutes. Transfer to heated platter. Sprinkle with salt and pepper to taste and serve immediately.

If you don't want to make it, there are actual baked chips at the supermarket and there are a few different varieties, too.
