A few years ago a gas station in Missouri sold spinach-cheese taquitos wrapped in a hard tortilla shell. If you have the recipe that would be great. Thanks.

Here you go!

I love them!

(1) 1.8 oz. pkg. Spinach soup mix
4 oz. or 1/2 cup Onion dip
8 oz. container Sour Cream
4 oz. or 1/2 cup Mayonnaise
(1) 14 oz. can Artichokes chopped
2 tsp. Garlic crushed
1/2 cup Parmesan cheese
12 corn tortillas
Butter-flavored cooking spray

Mix filling in mixing bowl.
Soften the tortillas via microwave or warm skillet and place about 1-1/2 tablespoons of filling in center. Roll up tightly into a cigar shape and secure with two toothpicks.

Spray tortilla rolls with cooking spray. Sprinkle with salt, to taste, and place seam side down on a baking dish. Bake at 375-degrees F. for about 20 minutes, or until crisp.

Have you ever heard of the Greek dish called spanokopita? It is spinach pie in filo dough. You can make this as a pie or wrap them individually. Anyway the filling is spinach & cheese (pick the kind you like) very delicious! I'm sure you could adapt this to taquitos. To make them crisp I'm sure they're deep fried....Hope that helps!!!

5 corn tortillas
5 eggs
1/4 c. butter
Salt to taste
1 can (4 oz.) tomatoes and green
chilies

Tear tortillas into bite size bits. Melt butter in skillet and drop in tortilla bits. Stir, being sure to coat all bits with butter, and let them self fry. Whip eggs in a small bowl and pour over tortilla bits, stirring to scramble. Add salt to taste. In blender, blend tomatoes and green chilies until smooth; serve over migas. This is optional.
