Heat some oil in a heavy skillet. Add plenty of salt and pepper to some flour. Put the flour on a plate and roll the chicken pieces in it till they're covered. Shake the loose flour off and carefully put chicken pieces into the hot oil. The oil should be very hot (but not smoking) and immediately start to bubble up when the chicken is put in the pan. It's best to use tongs. Fry till the bottom is brown and crispy then turn the chicken over and cook the other side. Thinner pieces like wings will cook faster than breasts. Good luck.

This is what I'm cooking tonight.

Chicken breasts, pounded, enough for 6
servings
2 boxes frozen broccoli spears
(defrosted)
2 cans cream of chicken soup
3/4 c. mayonnaise
1 tsp. curry powder
3/4 c. shredded Cheddar cheese
Bread crumbs
Melted butter

Grease large oblong dish. Put in chicken and defrosted broccoli spears. Mix soup, mayonnaise, curry powder and pour on chicken and broccoli. Top with Cheddar cheese, bread crumbs and melted butter. Bake at 350 degrees for 45 minutes to 1 hour. Serves 6. Baseball Official.
