Orange peppers are meant to be orange just as the yellow ones are meant to be yellow, but the red ones were formerly green. They do have a certain amount of acid although nothing like a tomato.

Orange peppers start out green, you put them in a bag in a cupboard for a couple of days and they change colors. First green, then red, then yellow, then orange. Try it. Its a lot cheaper than what most stores want to charge you. You just have to be sure and check it(the pepper) and peppers are not as acidic as tomatoes.

Coincidentally I bought some green peppers and left them on the kitchen windowsill for a few days - they slowly turned red but didn't go through the yellow/orange phase. So obviously red and green peppers are the same, but different stages of ripeness - orange and yellow peppers must be a slightly different variety.

In gardening I've found plants that produce only yellow peppers but plants that produce green (California Wonders) peppers will produce red peppers if left on the plant long enough. I haven't found peppers to be acidic--they seem to get sweeter as they mature on the plant

they are bred to be orange and they have some that are purple too. I am not sure about the acidic part but i dont think so. A health food coop could probably answer this.
