I recently went to an upscale grocery & purchased some dry aged rib eyes! OMG - they were good! For $35 /lb they should be!

$35 a pound? You got ripped. But, hey, thanx for supporting the industry! The tenderloin is the best cut. And you will only pay $15-20 a pound. A whole tenderloin may run you $120. My advice (I should charge you for this) Buy some good cuts and age them yourself. Do your research so you don't get sick. Before you cook any meat, let it come up to room temperature before you cook it. The protiens will relax and it will be more tender.
