Chewy Flour Tortillas

* 1 1/2 cups all-purpose flour
* 1 1/2 cups cornmeal
* 2 teaspoons baking powder
* 3/4 teaspoon salt
* 1 cup warm water (110 degrees F/45 degrees C)

I've got one! They're not as soft as store-bought, but better tasting.

2 cups AP flour
1 tsp salt (I use kosher)
A few hearty sprinkles of ground cumin
1/4 canola oil
2/3 cup warm water (temp doesn't matter)

Combine the flour, salt, cumin, and canola in the processor. Slowly drizzle in the water with it running. Process for 30 sec. Take out the dough ball, knead it a little, divide in however many portions you want, and press in a tortilla press.

I like them because they're heartier. I've made them this way for years and I convert anyone who's never had a homemade tortilla. I make them about once a week.
