I love cheesecake and have a variety of great recipes, this is the simple, quick, and very tasty:

FROZEN YOGURT CHEESECAKE
1 9" pie crust (purchase a pre-made or make graham cracker)

1 cup cream cheese, softened to room temp
2/3 cup plain yogurt
1/4 cup milk powder (1/3 cup instant
1/2 cup honey
(vanilla or almond flavoring-optional)
fruit in se4ason

Beat the cream cheese & yogurt together with a wire whick (or electric mixer, if you prefer) until the mixture is smooth. Whisk in the milk powder.
Add a few drops of flavoring if you wish. You might try lemon or orange, too. Pour the filling into the cooled pie shell & put it into the freezer.
If you are fond of frozen fruit, you may garnish the pie before freezing. Otherwise, when the pie is firm, garnish with fruit & then serve.

GRAHAM CRACKER PIE CRUST
9 inch crust: 1 ½ cups (about 20 graham squares),
3 tbsp sugar, 1/3 cup melted butter/margarine
Heat oven to 350. Mix crumbs, sugar & butter. Press mixture firmly against bottom & side of pie plate. Bake 10 minutes at 350. Cool before filling.

In case you don't like the thoughts of a frozen cheesecake, here's another simple & yummy recipe from my old tried & true cookbook:
CREAMY CHEESECAKE
2 packages (8 ounces each) cream cheese, softened
2 eggs
¾ cup sugar
2 tsp vanilla
½ tsp grated lemon peel

Heat oven to 350. Prepare graham cracker crust but do not bake. Beat cream cheese slightly. Add eggs, sugar, vanilla & lemon peel; beat until light & fluffy. Pour into crust. Bake until firm, about 25 minutes. Spread cheesecake topping carefully over pie; cool. Refrigerate at least 8 hours. Serve w/ strawberries if desired.
Topping: mix 1 cup dairy sour cream, 2 tbsp sugar & 2 tsp vanilla.

Caramel Pecan Cheesecake Bars

1-1/2 cups Graham Cracker Crumbs

1 cup coarsely chopped pecans, divided

2 Tbsp. granulated sugar

1/4 cup (1/2 stick) butter, melted

4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

1 cup firmly packed brown sugar

2 Tbsp. flour

1/2 cup Sour Cream

1 Tbsp. vanilla

3 eggs

1 jar Caramel topping


PREHEAT oven to 350°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Mix graham crumbs, 1/2 cup of the pecans, the granulated sugar and butter; press firmly onto bottom of prepared pan. Bake 10 minutes.

BEAT cream cheese, brown sugar and flour in large bowl with electric mixer on medium speed until well blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each addition just until blended.

BAKE 40 minutes or until center is almost set. Drizzle cheesecake with caramel topping and sprinkle remaining 1/2 cup pecans on top. Refrigerate at least 4 hours or overnight.

Remove dessert from pan using foil handles; cut into 32 bars to serve. Store leftover bars in refrigerator.

This recipe sounds harder than it really is. I made these for Christmas - they are easy and yummie! And they look really elegant, and people will think you slaved over them. LOL
Also, I used a Pampered Chef stoneware baking dish - because stoneware doesn't stick, I didn't bother with the tinfoil, and had no problem with the bars wanting to stick when I took them out.

Simple Cheesecake:

30 min 5 min prep
8 servings

8 ounces cream cheese
1/4 cup granulated sugar
1/2 cup sour cream
2 eggs
1 prepared graham cracker pie crust
optional topping
1/2 cup sour cream (mixed with 2 tbsp sugar) (optional) or 1 cup cherry pie filling (optional) or 2 cups fresh strawberries (optional) or prepared Jello gelatin (optional)

1. Mix cream cheese, sugar, sour cream amd eggs.
2. Pour imto pie shell.
3. Bake at 350 degrees for 25 minutes or till a 3 inch circke in center jiggles.
4. Cool 3 hours or overnight.
5. Serve with desired topping. Lemon Jello is especially pretty.

Or but the premade Keebler gramham craker crust

1 cup BREAKSTONE'S or KNUDSEN Sour Cream

4 eggs

1 can (21 oz.) cherry pie filling


Preparation
MIX crumbs, 3 Tbsp. sugar and butter; press firmly onto bottom of 9-inch springform pan. Bake at 325°F for 10 minutes. (Bake at 300°F for 10 minutes if using dark nonstick springform pan.)

MIX cream cheese, 1 cup sugar, flour and vanilla with electric mixer on medium speed until well blended. Add sour cream, mix well. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Pour over crust.

BAKE at 325°F for 1 hour 10 minutes or until center is almost set if using silver springform pan. (Bake at 300°F for 1 hour 10 minutes or until center is almost set if using dark nonstick springform pan.) Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Top with pie filling before serving.

New York Lemon Cheesecake: Prepare as directed, omitting cherry pie filling and adding 2 Tbsp. lemon juice and 1-1/2 tsp. grated lemon peel to cream cheese batter before pouring over crust.

Go to allrecipes.com they have step by step guide, I have followed it with every cheesecake recipe I've made with perfect results every time.
I have never made one with a waterbath, I think the most important part is when you turn the oven off and leave it in for an hour.

And don't listen to everyone telling you to buy the mix, I"m sure like everyone else has done that but now you're ready to make your own and let me tell you there is NO comparison.

you can get the Jello no bake cheese cakes or if you want a really good cheesecake get the recipe off of the philedelphia cream cheese package youll love it and you can add any kind of fruit spread in to it

go to foodnetwork.com and look for one of their cheesecake recipes rated 'easy'. they have a few. cheesecake is pretty easy to make, as long as the recipe is simple!

Philly brand cream cheese now has a cheese cake filling all made and in a tub. Just dump it into a premade gram cracker crust. No baking needed...Throw on cherry, blueberry or strawberry pie filling...It couldn't get any quicker or easier.

Jello has a box at the store with an instant cheesecake. Thats what I would suggest to you...
