I am making a potato sausage soup for 7 people. I have a pound of sausage. How many potatoes do I need and is that enough sausage for the amount of potatoes?

The ratio is 7 to 1, 7lbs potatos to every lb of sausage

Easy Potato Sausage Soup (7 persons)

"This is what I make on grocery shopping nights since it is easy to prepare and is very tasty. I generally double the recipe since my family loves it so much. Don't forget the garlic bread!"

INGREDIENTS
2 1/4 onions, chopped
1/2 cup and 1 tablespoon and 1 teaspoon margarine
4 2/3 cups diced potatoes
1 1/8 (10 ounce) packages frozen diced carrots
1 1/4 pounds Polish sausage, sliced
1 1/8 green bell pepper, chopped
3 1/2 cups water
1 1/4 teaspoons salt
1/2 teaspoon ground black pepper
3 1/2 cups milk
3/4 cup and 2 tablespoons dry potato flakes

DIRECTIONS
1-Using a large saucepan, brown onion in butter.
2-Add potatoes, carrots, green peppers, sausage, water, salt and pepper. Cook on low, for about 45 minutes or until the potatoes are creamy.
3-Add milk and cook until heated through and then add instant potato flakes. If you want a creamy potato soup add a 1/2 cup potato flakes, or if you want your soup thick like stew add 1 cup of potato flakes.
4-Let soup sit for approximately 5 minutes in order to thicken and then serve.

I don't think that 1 pound of sausage is going to do it.....I would use a couple of pounds and 7-8 pounds of potatoes.....good luck,,,,what I don't know is whether this is going to be served as an appetizer or main course.....that does make a difference and it is always better to have too much then not enough

A pound of sausage is sure not very much for seven people. I would figure at least a pound of potatoes for each person because the sausage is not going to stretch unless you do that. I would through in some other veggies too in order to make it more of a meal: green peppers, onions sauteed, celery, corn, carrots, mushrooms.

I really do'nt think a pound of sausage is a enough try about two lb of sausage. You should need 12 poatoes for seven people are more.

this recipe (which is supposed to be like Olive Garden's Toscana Soup) serves 6 - 8 (perfect for you) and calls for 2 large potatoes and 2 to 3 pounds of sausage...

INGREDIENTS:
2 medium to large russet potatoes (about 4 cups sliced and diced)
2 to 3 Italian sausage links, mild, casings removed
1 can (10 3/4 ounces) cream of potato soup
3 cups chicken broth
1 medium onion
1 cup evaporated milk
seasoned salt
pepper
1 to 2 teaspoons dried parsley flakes
PREPARATION:
Wash and thinly slice potatoes, then coarsely chop the slices. Leave some of the potato peel on, if possible. Thinly slice onion and coarsely chop. In 3 1/2 to 6-quart slow cooker combine potato, onion, soup, chicken broth, and onion.

Turn cooker on HIGH. In skillet over medium heat, brown sausage, breaking up into small pieces. Drain well on paper towels and add to cooker. Cover and cook on HIGH for 2 1/2 to 4 hours, or until vegetables are tender. Add milk and parsley flakes. Taste for seasonings and add salt and pepper to taste. Continue to cook for 15 to 20 minutes longer, or until heated through.
Stovetop: If cooking on stovetop, follow preparations directions, but simmer over low heat for about 45 minutes to 1 hour, or until vegetables are tender. Add milk and seasonings and heat through before serving.
Serves 6 to 8.

this one calls for more potatoes and less sausage...
POTATO SAUSAGE SOUP

2 cans mushroom soup
2 c. water
4 c. milk
2 c. instant potatoes
4 med. potatoes (diced) 5 potatoes for a hardy mix
1 med. onion, finely chopped
1/2 lb. ground sausage or turkey (browned)
1/2 tsp. celery salt
1/2 tsp. seasoned salt
1 tbsp. parsley flakes
Black pepper to taste

In 5 quart or larger saucepan, put soup, water and milk. Turn on low to medium heat and keep stirring to keep from scorching. Add instant potatoes and stir well. You can add more instant potatoes if you want it thicker.
Add potatoes, onion, sausage or turkey and seasonings. Continue cooking until potatoes are done. Seasonings can be adjusted to taste. Makes approximately 4 quart.

my grandma tought me to use one medium sized potatoe for every guest. she said it was just like a baked potatoe everyone eats one. so thats how i gauge how much i need for potatoe soup and mashed potatoes. i usally throw in two extra just in case someone wants an extra serveing.
