I have A LOT of ground pork in my freezer and I don't know what to do with it. Please do not suggest tourtiere

Sweet and Sour Pork Patties

INGREDIENTS
1 1/2 pounds ground pork
1/2 cup soft bread crumbs
1 teaspoon red pepper flakes
1 teaspoon seasoning salt
1 egg
1 tablespoon milk
2 tablespoons chopped fresh parsley
1/2 cup finely chopped onion
1 (10 ounce) jar sweet and sour sauce

DIRECTIONS
Mix pork, breadcrumbs, red pepper flakes, salt, egg, milk, parsley and onions together in bowl. Shape into 8 to 12 patties.
Slowly brown in frying pan until juices run clear; drain well. Heat sweet and sour sauce in frying pan. Place cooked patties in pan and heat through.

Here is a easy recipe.


1 med. onion, chopped
1 c. thinly sliced celery
1 c. Minute Rice, not cooked
1 can cream of chicken soup (no water)
1 can cream of mushroom soup (no
water)
1 lb. ground pork

Saute the onion and celery in small amount of shortening. Add the ground pork and brown. Mix the soups together until blended. Add rice, onion, celery and pork. Put into buttered casserole dish and bake covered for 1 hour in 350 degree oven. TIP: Some chopped green pepper and shredded carrots may be added to above ingredients. This adds color to the dish.

Ground Pork Chili

Serves 4
1 tbsp vegetable oil 15 mL
1 lb lean ground pork 500g
1 large onion, chopped 1
2 tbsp minced garlic 30 mL
1 cup chopped green peppers 250 ml
1 28oz (796 mL) can diced tomatoes 1
2 tbsp chili powder 30 mL
1 tbsp ground cumin 15 mL
1 tbsp unsweetened cocoa powder 15 mL
1 tsp salt 5 mL
1 tsp ground black pepper 5 mL
1 tbsp Worcestershire sauce 15 mL
1 19oz (540 mL) can kidney beans, drained and rinsed 1

Heat oil in a saucepan. Add pork, onion, garlic, and peppers. Cook over medium heat until pork is no longer pink, about five minutes. Stir frequently to break up pork. Add tomatoes and seasonings. Simmer gently, uncovered, for about one hour. Add a little water if mixture becomes too dry. Add beans and simmer for a further 10 minutes.
Serve with a dollop of sour cream,or sprinkle with grated Monterey Jack cheese and broil just before serving.

**QUICK MENUDO**
In a saucepan, brown 1/2 kilo ground pork, 1 cup tomato sauce, 1/2 cup water, & 1 cup cubed potatoes. Cook until done. Season to taste with salt & pepper or a bouillon cube. Add 1 small can garbanzos & 1 cubed red or green bell pepper. Cook5 mintues more. You can also add raisins and frozen peas.

You can use ground pork in almost anything you normally use ground beef. It can also be mixed with ground beef in most recipes. Two recipes we like using just ground pork:

BBQ Meatballs

1 egg, beaten
1/2 cup bread crumbs
1/2 cup finely chopped onion
1 Tbsp. milk
1/2 tsp. dry mustard
1/4 tsp. ground black pepper
1 pound ground pork
1 cup purchased barbecue sauce


Combine egg, bread crumbs, onion, milk, mustard, and pepper. Add ground pork; mix well. Shape into 12 balls. Place meatballs in lightly greased 2-quart baking dish. Pour barbecue sauce over meatballs.

Bake, uncovered, in a 350 degree F oven for 45 minutes.

Pineapple Pork Chili

1 lb. ground pork
1 16-oz. jar pineapple salsa*
1 15-oz. can red kidney beans, rinsed and drained
1 8-oz. can tomato sauce
1 Tbsp. chili powder
Pineapple slices

In 3-quart saucepan brown pork; drain. Stir in salsa, beans, tomato sauce, and chili powder. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes. Serve with pineapple slices.

*If you can't located pineapple salsa, use regular salsa and add 1/3 to 1/2 cup crushed pineapple.

Use as you would use ground beef in spaghetti sauce.

Make a meat loaf, seaoned withplentiful herbs.

Buy some Zatarains Jambalaya mix and follow the directions.

Barbecue Pork Heroes

1 1-lb. loaf French bread ½ cup barbecue sauce
1½ lb. ground pork 1½ teaspoon chili powder
1 small onion, chopped &½ teaspoon salt
1 rib celery, chopped 1 cup shredded Cheddar cheese
1 glove garlic, minced
Cut a shallow slice, 2 1/3 inches wide, from the top of the bread. Remove bread to hollow inside of loaf, until sides are ½ inch thick. Brown pork, onion, celery and garlic in large frying pan. Add barbecue sauce, chili powder and salt, stir to combine. Line bottom of inside loaf with half of cheese. Add meat mixture, sprinkle remaining cheese on meat. Relace top of loaf and wrap in foil, sealing top and ends. Place on jellyroll pan and bake in hot oven, 400 degrees, for 20 minutes. Let stand 5 minutes before slicing. Makes 6 servings.


Holiday Pork Loaf with Spicy Topping
1½ lb. ground cooked ham 1½ lb. ground fresh pork
1½ cup fine bread crumbs 2 eggs, beaten
½ cup onion, chopped ½ cup milk
Mix together ground ham and ground pork with other ingredients. Microwave 40 to 50 minutes until done. Allow to set 10 minutes before slicing.
Spicy Topping
In a small bowl, combine 2 tablespoons butter, 1 cup packed brown sugar, 1 teaspoon allspice. Microwave 3 to 5 minutes until dissolved. Serve meat loaf topped with spicy topping.
