The same reason people can change there tone while talking.There is the excited meow,the I'm hungry meow, the theres a bird in the yard meow, the get outta bed meow and the she started the vacuum MMEEEEEEEOOOOOOWWWWW !!

They have various vocal ranges, and they will meow differently for different reasons. I can tell when my cat is meowing out of distress, or when she's just saying hello! You'll get to understand the cat language after a while!

They can be different meows depending on the breed, age and health, and also what they are wanting to 'say' to you.
Say if they are hungry or 'moaning' it's very long drawn out meows usually.
Also, some cats which are more vocal tend to have higher pitched meows.

It's their way of talking. Cats have about 18 different 'meow's and use certain sounds for certain things... they use one sound with a human and other sounds with other animals.

They're talking! I can tell by the way my cat meows (and by her body language) if she's happy, angry, hungry, scared, and so on. Sometimes I think they have a better way of communicating than we do!

Stray cats come to our house daily so l'm so familiar with the way they "talk".
They chorus meow meow continously as l'm about to feed them. Their way of saying "make it fast, we're starving". Cute.

Same way as various dialects and the different ways to spell miaow! Maybe cats are trying to imitate their owners voices as they appear to them.
