Would like 2 see an ans to that myself,Tours with everything provided aprox. (here) is $60.00 for 2 1/2 hrs.

try the Adirondack Champlain guide service(they have a web site) up in willsboro, ny.
they have package deals and services ala carte, you may be able to rent a canoe/boat and have lodging accommodations, (not a 4 star hotel and not "rustic")the owner Pete Casamento ,very nice guy, and has been all over the adirondaks, and if you are interested in fishing along the way,he will have some very good insights

Upstate New York is a large area -- if you are looking in a particular region, try doing a web search or even a search on switchboard.com for canoe rentals and then give the name of the region (e.g. "finger lakes")
