Continental Cheese Bake
6 servings 1¼ hours 30 min prep
1 cup onions (sliced)
1 tablespoon butter or margarine
8 hardboiled egg (sliced)
2 cups swiss cheese (8 Ounces, shredded)
1 (8 ounce) can cream of mushroom soup
3/4 cup milk
1 teaspoon prepared mustard
1/2 teaspoon seasoning salt
1/4 teaspoon pepper
6 slices rye bread, Buttered
Heat oven to 350. Cook and stir onion in butter until onion is tender.
Spread mixture in baking dish 11x7x1 1/2 inch. Top with egg slices, sprinkle with cheese. Beat remaining ingredients except bread in bowl with rotary beater. Pour soup mixture over cheese*; overlap bread slices on top of casserole (these are the small rye bread rounds, not full sized slices). Bake 30 to 35 minutes or until heated through.
Set oven control to broil and/or 550. Place casserole 5 inches from source of heat; broil 1 minute, or until bread is toasted. (Party rye can be substituted for caraway rye).
*Do ahead note: To make casserole in advance, prepare casserole as directed except - do not top with bread slices or bake. Refrigerate several hours or overnight. At baking time, place bread slices over top and bake 40 to 45 minutes.
(We always serve this with bacon curls, coffee cake and a fruit cup).
Bacon curls in oven: Set oven for broil. Cut 18 slices bacon in half; roll each and secure with wooden pick. Broil 4 - 5 inches from heat source for 2 minutes. Turn: broil 2 minutes longer or until bacon is crisp.
Continental Crab Cakes
Serve these as a main dish, or make them much smaller and voila! - yummy hors d'oeuvres!
4-12 servings 40 min 20 min prep
1 lb crabmeat, picked over
1 1/2 teaspoons Maryland crab seasoning
1/4 cup celery, finely chopped
1/4 cup onions, finely chopped
2 tablespoons mayonnaise
1/4 lb unsalted butter
2 eggs
2 lemons, juiced
2 tablespoons fresh cilantro, chopped
2 fluid ounces clam juice or low sodium chicken broth
1/2 cup seasoned dry bread crumbs
1/2 cup cheddar cheese, shredded
1 pinch flour
Sauté celery and onion in 2 ounces of the butter, until tender; remove and cool.
When cool, mix with the crabmeat, breadcrumbs, cheddar, crab seasoning, and mayonnaise.
Form 4 crab cakes and flour them.
Beat the eggs to make an egg wash.
Dip the floured crab cakes in the egg wash and sauté in a non-stick pan with the remaining 2 ounces of butter.
Cook slowly, and be careful that the butter does not burn.
When golden brown, place on a hot plate to keep warm.
Keep remaining butter in the saucepan to make sauce.
Deglaze the pan with the lemon juice and chicken stock.
Pour over top of the crab cakes.
Chili Cheese Fries

1 (15 ounce) can chili

Heat chili according to label directions.
Arrange fries on large serving platter.
Pour hot chili over fries.

Uncle Bill's Hamburger Patties
4 servings 27 min 15 min prep
2 lbs lean ground round
2 large eggs, beaten
1/2 cup crushed soda crackers or fine dry breadcrumbs
3/4 teaspoon granulated garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons hickory barbecue sauce
6 tablespoons olive oil (for frying)
In a large mixing bowl, mix together ground round, beaten eggs, soda crackers, garlic powder, salt, pepper and barbecue sauce.
Mix until well incorporated.
Weigh out hamburger patties to 7-ounce portions.
Press together and flatten to about 3 1/2" in diameter or use a mould.
The patties should be about 3/4" thick.
Using a round wooden spoon handle (about 1/4" round), make a hole in the center of the hamburger pattie.
In a frying pan over medium-high heat, heat olive oil.
Place 3 patties into the hot oil and fry for about 2 to 3 minutes.
Turn patty over and continue to fry for about 2 to 3 minutes.
The hole that was made in the pattie will fill in when the hamburger is cooked through properly.
Check for doneness to make sure there is no pink showing.
Serve in a nice large bun that is warmed and buttered with a spread of mayonnaise, Dijon mustard, a slice of sweet onion, a slice of a large tomato, and a leaf of lettuce.
A pickle of your choice adds an additional touch.
Fry some mushrooms and spread some over the top of the bun.
This makes a fantastic hamburger.
