The recipe calls for 3/4 c. ground almond and 1 tsp. almond extract. My neice is allergic to nuts and I dont want to take a chance wtih the recipe. So, what can I sub. instead of the nuts?

I want to make a recipe called French Yule Log. In the recipe, it calls for 3/4 c. ground blanched almonds and also 1/4 tsp. almond extract. (it also includes 1/3 c. flour). Now, my ? is is there any way of sub. the almonds with something else? My niece is allergic to nuts and don't want to take any chances with it. Any suggestions?

Ignore the other poster - you never want to replace a dry ingredient like ground almonds with liquid (Amaretto). Not to mention, your niece may be allergic to Amaretto too.

It really depends upon the recipe. I am guessing it's a type of torte (flourless cake)? If you post more information about what you are trying to make, it may be helpful.

For the ground almond, depending upon the recipe, you may be able to substitute flour. For the extract, I would just use a different extract that goes well with the other flavors in the recipe (vanilla is usually a safe bet).

What you choose for the extract depends on what flavor the cake is, and whether or not you intend for the fondant to be eaten or just for decoration. Lemon will be nice if you are making a white cake or a butter cake. The almond would be nice on a chocolate cake. Remember a little extract goes a long way, especially lemon or almond, so if your not sure of the right amount add it a little at a time until you get the desired flavor.

What are you making? Assuming it is a cake or torte, I would add extra flour (maybe 1/2 cup) for the ground almonds and then anyflavor that you like. You could use 1tsp of lemon zest and 1 tsp lemon juice (or orange) for example.

If she is allergic to nuts you need to find a different recipe! You might try just omitting the nuts and using cherry extract or flavoring but it will not be the same.. I would just try finding something else to make. You don't want to kill her by using nuts. My gf's daughter is so allergic to coconut that when mom used baby wipes that had coconut oil in them (she did not know) the baby had to go to the ER. Not even ingested, they made her that sick.

well it depends on what's the recipe is, I'm not sure if there's anything that would replace the taste or flavor of almonds but i guess you can alter it to your liking

Perhaps ground ginger and vanilla extract.

Ginger comes from a root and the vanilla extract comes from a bean, unless it's a substitute vanilla extract, which is just flavored.
