I really want the real thing- not fake filling of cream cheese and suger. I'm sick of shopping at Wegmens, but I love them too much to stop , and I am obsessed about them, so the real recipe or no deal- and trust me, I will know if its the real thing! THANK YOU!!!!!!!

CANNOLI WITH RICOTTA FILLING

1 1/3 c. flour
1 tbsp. shortening
Pinch of salt
1/2 tsp. sugar
Wine, sweet or dry

RICOTTA FILLING:

1 lb. ricotta
2 tsp. semi-sweet chocolate chips
1 tbsp. candied orange peel, cut fine
1 jigger creme de cocoa or other liqueur
2 tbsp. sugar

CANNOLI: Mix flour, shortening, salt, and sugar. Add enough wine to make a stiff but workable dough. Roll into ball; let stand for 1 hour. Roll out dough 1/8 inch thick. Cut into 5 inch squares. Place cannoli tube across the corners of the square. (Cannoli tube should be 8 inches long and 1 inch in diameter). First fold one corner around the tube, then the other and press together. Fry in deep fat, one at a time, until dark golden brown. Remove cannoli carefully and let cool before filling.

RICOTTA FILLING: Cream ricotta well, add chocolate chips, orange peel, creme de cocoa, and sugar; mix very well. Fill puffs with filling. Makes 12.

I'm away from home for a couple of weeks so unfortunately I can't give you an actual recipe. The recipe I do use is on the back of the cannoli tube package - and it does work. The cannoli tubes are made by Villa Ware and are available at most good Italian grocery stores.
Since I seem to be the only person who has actually made cannoli's answering this question allow me to share with you what I have discovered.
The easiest way to roll out the dough to the necessary thinness is with a manual pasta machine ; under $20.00 and also made by Villa Ware
The strip of dough you will wind up with will be about 4" wide and the perfect size to use a 4 inch circular cutter on
Buy at least 16 -20 cannoli tubes otherwise it will take forever to make them. The reason being that when you take the tubes out of the oil they are going to be really HOT!! and you will have to wait a while before the cool down and can be re-used.
Expect at least a 25 % shell failure rate until you get the hang of how tighty to initilally wrap and the technique for unmolding the shells
Use only well drained whole milk ricotta cheese
If you are going to use candied fruit make sure that you pulse it in a food processor until it is really fine. The reason being that large pieces of anything including -Ugh- chocolate chips will quickly clog the star tip of the pastry bag that you are using to fill the cannoli's with. Not good
When you buy cannoli's they should be filled to order- never buy a pre-filled cannoli. When you serve them obviousley do the same.

Cannolli Dip
Perfect for parties! It is so easy and everyone will love the sweet creaminess of the dip, combined with the spicy cinnamon of the tortilla dippers. It's so yummy and so easy -give it a try!
10 servings 15 min 10 min prep

DIP
1 lb low-fat ricotta cheese
1 cup powdered sugar
1 1/2 cups mini chocolate chips
1 cup maraschino cherries (quartered)
1 tablespoon vanilla
1 teaspoon cinnamon
TORTILLA DIPPERS
10 flour tortillas (burrito size)
cooking spray (butter flavor is best)
10 teaspoons cinnamon

Slice tortillas into eight wedges and place on sprayed cookie sheet.
Spray tops with cooking spray then use fingers to sprinkle wedges with cinnamon.
Place in oven to broil until golden brown and crispy.
While these are cooking, mix ricotta, sugar, chocolate chips, cherries, vanilla and cinnamon.
Serve chilled.

Cannolli Filling
Optional: Grated chocolate, for dipping the ends of the cannolli in. 4 Tbsp. of finely chopped candied fruit or chocolate chips/small chunks

1/2 pint whipping cream
1 lb ricotta cheese
1/2 cup confectioners' sugar

Whip the cream until stiff, add the sugar. Now you can add the candied fruit or the chocolate chips, or whatever you like! Fill the shells and dip ends in the grated chocolate. Some folks like ground pistachio nuts instead of grated chocolate - I've even seen cookie 'sprinkles' used. Dust the cannoli with confectioners sugar just before serving.

Lazy Man Cannolli Pie
This is too easy to make for such a delicious result. Gourmet Club loved it.
8 servings 11 min 10 min prep

3 cups whole milk ricotta cheese
1/4 cup sugar
1 teaspoon vanilla
1 teaspoon finely grated orange rind
3/4 cup chocolate chips
1 9-inch Oreo cookie pie crust

Combine ricotta cheese, sugar, vanilla and orange rind in a medium bowl.
Whisk until thoroughly combined.
Melt chocolate chips in the microwave (about a 1 minute on high) or in a double boiler.
Mix 1/3 cup melted chocolate with 1/2 of ricotta mixture.
Spread into prepared crust.
Top with plain ricotta mixture and drizzle with remaining melted chocolate.
Refrigerate overnight until firm.

For the real recipe, use cannoli shells, and ricotta cheese. Sweeten with sugar to your liking, and add some mini chocolate chips, if you choose. Cinnamon and/or nutmeg can also be added, as well as vanilla. These are how real cannoli's are made.
