I was thinking Spicy Shrimp with a glass of red..

1/4 cup butter, don't even think of using anything else
1 1/2 tablespoons olive oil
1 tablespoon chili sauce
2 tablespoons Worcestershire sauce
2 teaspoons lemon juice, only the real stuff
1/2 lemon, thinly sliced (with skin)
6-8 cloves garlic, crushed
1 teaspoon chopped fresh parsley
1 tablespoon red pepper flakes
1 teaspoon oregano
1 tablespoon red pepper sauce, such as tabasco
1 lb jumbo shrimp

Combine all ingredients except shrimp and simmer for 5 minutes.
Allow to cool.
Wash, peel, and devein shrimp.
Dry and marinate 8 hours in prepared mixture.
Preheat oven to 300F.
Place shrimp and marinade in a shallow baking dish and bake 10 to 12 minutes, basting twice, until shrimp is cooked.
Serve in soup bowls with lots of crusty bread to mop up the juices.

Cajun Fried Chicken

4-5 boneless chicken breasts, boneless pork chops, or any chicken with bone in
1 cup of self-rising flour, unsifted
1 tsp garlic salt
1 tsp cayenne pepper
1tbs Dijon mustard
1/3 cup Tabasco
¼ cup water
1 – 1 ½ cups oil, for frying

Combine cayenne pepper, mustard, Tabasco, and water in plastic container or gallon size zip lock bag. If you pierce chicken with a fork first it will be a lot spicier (don’t do this unless you like it HOT!). Place chicken in marinade, turning to coat well. Marinate for no more than 1 hour, turning frequently.

Combine self-rising flour and garlic salt in a plastic bag or container. Add chicken to coat, one at a time is best. I use tongs so my hands don’t get messy.

Heat vegetable oil in large skillet on medium high heat.

Fry chicken pieces, turning once, for about 15-20 minutes total. Remove from pan immediately and keep warm. If you use regular pieces of chicken, with bone in, cook for at least 30-45 minutes, or until done.

Serving Suggestions:
Garlic flavored pasta or garlic mashed potatoes and green beans or broccoli.

Shrimp quesadillas or fish taco's sound yummy! Indian sounds good if you want something spicy- now, i'm hungry

Do some chicken fajitas. Brown slivers of chicken, throw in some onions and peppers, a healthy amount of cumin and chili powder, salt pepper, and a few dashes of hot sauce. Just as it is finishing squeeze some fresh lime juice on top. Serve on tortillas with whatever garnishes you like, eg soucream, salsa, cheese, etc.

how about a frittata instead? using a heavy 10" skillet (preferably an oven safe one), spray with non stick cooking spray. beat 3-6 eggs, depending on how many people you are serving, with 1/4 cup milk, a pinch each of salt & pepper, 1/4 teaspoon ground cayenne or chili pepper. tthinly slice a red or green bell pepper. slice chicken breast or chorizo sausage (pre cooked). arrange sliced veggies and meat in bottom of skillet, gently puor egg mixture into pan. heat on med high heat until edges begin to set. the, either flip or put entire pan into a 350f oven until top side is done. serve with salsa & chopped green onions &shredded cheese.

i just made a tuna queso..i mixed canned tuna with light mayo and salsa... put a piece of swiss cheese down on a whole wheat tortilla, added the salsa tuna mix.... it was acutally REALLY good and healthy.. didn't think it would be.

good quesadillas with guacamole & maybe chilli sounds good.

chicken quesadillas sound realy good too.
