Should soy sauce be discarded if left out on counter over night in 65 degree temperature?

Yes it is. The sodium wont allow for bacteria to survive in there. Most Asian restaurants leave their soy sauce on the counter or table all day long, over night, etc... Its no biggie.

Soy sauce is full of salt. Salt is a preservative, so you don't have to refrigerate it. I live in Philippines, and don't refrigerate mine. After a long time here (with 80-85 degree temperature), I discover that the top of the bottle starts to get green stuff around it, so I pitch it. I don't use soy sauce that much, so this only happens after 6 or 8 months.

Yes just noticed KB's remark about there being exceptions... The Japanese light soy sauce used for flavoring soups should be refrigerated - and probably all light soy sauces (how can you tell if it's light when the label doesn't say so? If has the color of tea, and consistency close to water).

I don't know which kind of soy sauce you have. But some expensive soy sauce needs to be refrigerated. If you have this kind, there is an instruction saying that the soy sauce must be refrigerated. But if you don't see any instruction saying that the soy sauce has to be refrigerated on the bottle, it doesn't need to be refrigerated.

But if you have the expensive kind and left it out, you can still use the soy sauce because the temperature was around 65 degrees, and it wasn't like left out under the sun during hot summer time :)

Yes. Think about it, Chinese food places do not refrigerate soy sauce, granted the packets are closed, but I think it would take a very long time for it to spoil.

I have never refrigerated soy sauce. It sits in the cupboard for years.

It's fine. I've never refrigerated soy sauce. I just keep it in my cupboard, even after opening.

It's perfectly safe. In fact, soy sauce don't need to be kept in the fridge.

I think's it's fine- I've left my soy sauce out a few times and one i've realized it put it back in the fridge, I figure the asian resturants leave their out all day so mine must be ok..
