Everyone's metabolism is different. Normal blood sugar reading is 100-125. It should be less than 100 after fasting.

Eating a high carb meal will cause your blood glucose to go up, but how much depends on your insulin response. You body produces insulin when it detects high blood glucose so it can bring the level down to the normal range - it does this by storing the glucose in your liver (and muscle cells) as glycogen. Once the storage "Tanks" are full, it is stored as fat. (bummer)

a normal blood sugar reading should be between 70 and 120... after eating a high carb meal, it would probably go between 150 and 180... If you go over 200... you are getting too high of a count and should be more careful... If there is diabetes in your family history then you need to really watch your carb intake and your diet... exercise is also helpful to keep the balance of your carb and diet intake with your blood sugar count... If you maintain a regular daily walk, or some other kind of workout, it won't be as hard to keep healthy. Start by getting a good idea from your Dr. about what would be a good carb intake for each meal... and then stick to it... My husband went into a diabetic coma a few years ago.. he nearly died that Christmas morning... his blood sugar count was 1,248... an all time high record! He was dying!
He had diabetes for 4 years, now he is in a sort of remission, he is insulin resistant... and could go back to diabetes anytime... he is not that careful either.. but maintains a regular daily walk to keep healthy... I know he has to try harder to watch his carbs tho!

The only way to find that out is to eat a high carb meal, then check your blood sugar. Everyone's metabolism is different. What you need to do is check yourself fasting to make sure your sugar is returning to normal It can range from 70-110 in the am. after fasting during the night. If you are really concerned you should see a doctor and have a five hour glucose tolerance test done.

I don't know that any number you got after a high-carb meal could even be taken into account. When testing blood sugar, the way to get an accurate reading is to do it after an 8-hour fast.

You would need to find out what your normal blood sugar is and go from there. Each person is different so what is normal for one person may not be normal for another.

two hours later when the food is completely digested it should not exceed 120 for normals and 160 for diabetic prone
