Its simple, Just open your mind. Try something new, like a turnip, parsnip, rutabegga (makes great oven fries) Zuchini or red bell pepper stuffed with stir fried rice, twice baked potato, lentil and rice cakes, etc. Just dont complicate your though process. Try a baked apple with agave nector, or a pear poached in red wine or fruit juice., try to think outside the box is all. As for learning to cook them, again, its simple if you let it be. Buy a veggie cookbook (I get them in used bookstores all the time) and give it a whirl. Invest 5 dollars at a thrift store in a food steamer and rice cooker. My 12 year old loves to experiment with veggies, and often turns out a terrific, creative veggie meal Its all in the approach, I think

SOme suggestions to help you eat more veggies..cook and raw.
Raw...slice up -carrot sticks, celery sticks, broccolli pieces, tomatoes..(your choice of veggies) and make a "dip" (ranch dressing) (snacks)
as for cooked veggies.... Try adding onion/carrots in a pot of stew(stewing beef, browned then drained..add carrots onions, potatoes, Peas, corn if you like, water to cover, salt /pepper, dash of worchestershire sauce ....let simmer for a couple of hours...(the carrots soften and have a wonderful taste)
Make soups.....Chicken vegetable soup.....or minestrone...there are many websites with easy recipies for soups using a variety of veggies*, then you can add chicken, noodles etc*

Anybody who is changing their diet has to remember that you have to take time to change your tastes, most likely you have been eating the way you do for a long time. Processed foods are full of addicting substances that will take time to move out of your system. If your strict and don't allow yourself to eat any junk food, you will start to notice that you crave vegetable, as hard is that is to believe. Just remember almost every vegetarian/vegan/raw foodist out there once ate like you. It just takes patience and self control. But I can promise you that you will never regret it.

start simple, find fresh fruits and veggs you liek and buy just alittle of each kind, and try them out, eat lots of raw food, carrots and celery is good raw
make juice
steam mixed vegtables and eat it with some lite soy sauce, and maybe some rice.
go to vegetarian resturants often, and you can get ideals for food you can cook yourself at home from the menu

I just went to the store one day and picked up all different kinds of fruits and veggies that i haven't tried or haven't had in a while. Start with making dips, stews, soups,and just raw. But you have to be willing to have a open mind and mouth.

My suggestion would be go to a food website such as http://www.kraftcanada.com/en or http://www.foodtv.ca/ and put in veggies you want to use or do a search for veggie dishes....
If that doesn't help, do the old fashioned route.... look in a cooking book :)

Maybe if you try eating them in casseroles and stews first you can begin to cultivate a taste for them by blending the flavors. My bf is a vegetarian and here are some of his favorites. My children love raw vegetables dipped in ranch dressing.
*Chicken Crescent Roll Casserole (substitute steamed broccoli & sliced carrots for the chicken)
1 roll crescent rolls
3 chicken breasts, (seasoned, cooked and chopped)
Grated cheese, your choice
1 can cream of mushroom soup (may substitute cream of chicken or cream of celery)
¾ cup milk
Roll crescent rolls flat. Put a little chicken and cheese on each crescent and roll up. Coat baking dish with butter or non-stick spray. Place rolls in baking dish. Brush tops with melted butter. Mix soup and milk together and pour over rolls. Bake at 350° for 30 minutes or until brown.
*Vegetable Sauté with Rice
2 Tablespoons butter
1 cup chopped onion
1 cup chopped celery
1 cup chopped bell pepper
1 cup sliced mushrooms
1 medium tomato, diced
1 ½ cup Uncle Ben’s rice
3 cups water
1 tablespoon butter
½ teaspoon salt
Microwave the rice, water, butter and salt on HIGH for 7 ½ minutes in a microwave safe dish. Stir. Microwave 28 minutes on MEDIUM power. Leave in microwave covered for 5 minutes.
While the rice is cooking sauté the onion, celery, bell pepper and mushrooms in1 Tablespoon butter. Once sautéed, remove from heat and add the diced tomato. Cover and let sit until rice is finished. When the rice is finished, add the sautéed vegetables and stir together well.
We like this served alone or with coleslaw. Tonight I served it with the grated sweet potato casserole from my little blue cookbook. It has a really good flavor, but you can add or delete from the vegetables.
This is FAST and TASTY!!!
*Pasta Salad
3-4 Eggs, boiled and sliced
1 Cup Celery, chopped
¼ Cup Green Onions, chopped
2 Cups Chicken Breast, diced (Optional)
Mayonnaise
Dijon Mustard
Salt and Pepper to taste
Spiral or Penne Pasta, cooked (1# bag ?)
Boil and slice 3 to 4 eggs. Cook pasta and drain. Have the celery, green onions and chicken prepared in a large bowl. Blend 1 tablespoon of mayonnaise to 1 teaspoon of Dijon Mustard. (I usually use two to three heaping tablespoons of mayonnaise to two to three heaping tablespoons of mustard. Use enough that it isn’t too dry.) Add salt and pepper to taste and blend. Add the pasta and stir well to combine.
This is quick and easy. Add, reduce or delete as desired. I don’t use the chicken and add more celery. My family loves this warm and as cold leftovers. The only problem is that there are rarely leftovers!! As far as the mustard, I especially like Westbrae Natural (Dijon Style Mustard). It comes in an 8 oz. Jar. This is another one of those recipes that I usually have all the ingredients handy and is so fast to prepare.
*BURRITOS
Saute' some sliced onion and strips of bell pepper. On your tortilla (large one) put a spoon of cooked rice, the sauteed vegetables, black beans, diced tomato, shredded lettuce, grated cheese. Top it with sour cream, salsa and guacamole if desired. Just build this as you wish. We have it about once a week and love it.

It does not matter how you cook them, what you cook or whether or not you eat them raw.
It is up to you and if in you're mind you don't like them then nothing or no recipe is going to make it better unless you open you're mind to eating vegetables.
You have to be in control of that first, then consider asking for better ways to prepare them, otherwise it will be a waste of you're time and money.
