Tofu scramble
Tofu scramble is a popular vegan breakfast dish similar to scrambled eggs.
Although this recipe calls for onions and green peppers,
try adding different vegetable combinations, such as spinach, mushrooms and green onions.
The possibilities for tofu scramble are endless!
INGREDIENTS:
1/2 yellow onion, diced
1/2 green bell pepper, diced
1 block tofu, drained and pressed
2 tbsp oil or margarine
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried parsley
1 tbsp soy sauce
2 tbsp nutritional yeast
1/2 tsp turmeric (optional)
PREPARATION:
Slice the tofu into approximately one inch cubes. Then, using either your hands or a fork, crumble it slightly.
Sautee onion, pepper and crumbled tofu in oil for 3-5 minutes, stirring often. Add remaining ingredients, reduce heat to medium and allow to cook 5-7 more minutes, stirring frequently
and adding more oil if needed.
Wrap in a warmed flour tortilla with a bit of salsa for a breakfast burrito or top with soy cheese (Optional)
Vegan Blueberry Muffins
INGREDIENTS:
2 cups flour
1/3 cup sugar
2 tsp baking powder
1/4 tsp salt
1 cup soy milk
1/4 cup margarine
Egg replacer for one egg (or 1 tbs soy flour in 2 tbs water)
1 tsp lemon juice
1 cup fresh or frozen blueberries
PREPARATION:
Preheat oven to 400 degrees and lightly grease a muffin pan.
In a large bowl, combine the flour, sugar, baking powder and salt. Add the soy milk, margarine, egg replacer (or soy flour - water mix) and lemon juice and stir until mixed.
Gently add the blueberries.
Spoon the batter in to the muffin pan, filling each cup about 2/3 full.
Bake for 20-25 minutes, until muffins are golden brown.
Banana French Toast
This easy vegan French toast recipe uses bananas instead of eggs, giving it a sweet flavor. It is best with thickly sliced whole grain bread, but this recipe works well with just about any kind you choose.
INGREDIENTS:
2-3 ripe bananas
3/4 cup soy milk
1 1/2 teaspoon cinnamon
1 teaspoon pumpkin pie spice (optional)
1 teaspoon vanilla
bread of your choice
vegan margarine
PREPARATION:
Blend bananas, soy milk, cinnamon, pumpkin pie spice and vanilla in blender or food processor
and pour mixture into pie plate or wide dish.
Gently dip bread slices into the mix, coating both sides.
Fry in vegan margarine in medium-hot skillet until golden brown.
Serve with maple syrup if desired

Swiss Breakfast
This Swiss Breakfast recipe has a great tasting combination of flavors that give you both natural sweetness and tartness. It is good served hot or cold, making it a good, comforting meal all year round. It’s worth making a big batch to have on hand.
Prep and Cook Time: 10 minutes
Ingredients:
4 cups oats
1 tsp cinnamon
½ cup raisins
½ cup sliced almonds
½ cup dried apricots chopped
½ cup sunflower seeds
4 chopped dates
¼ cup dried cranberries
Directions:
Mix all ingredients together. The above amount of ingredients will make about 8 servings. This can be kept so it's ready for future use.
For 2 servings bring 2 cups water to a boil. Add 1 ¼ cups Swiss Breakfast. Turn heat to low and cook uncovered, stirring occasionally until water is absorbed, about 7 minutes. Cover, and set for about 2 minutes before serving. Serve with a touch of low fat milk or unsweetened soy milk.

I'm very fond of couscous for brekkie.
1 cup soy milk
1/2 cup couscous
Heat the soy milk to an almost boil. Toss in the couscous and stir it for about a minute or so. It will absorb all or most of the soy milk. It's best if it's a little "milky" so you might want to add more before you eat. I like to add almond slivers and raisins. I also like to add cinnamon and ginger while the couscous is cooking. But you don't have to. It's nice to flavor it up with maple syrup.

I use my electric rice cooker to make yummy oatmeal with cashews and cranberries. It can also be made in the slow cooker overnight, so its ready in the morning. I use steal cut oats (not the quick cooking kind) but you could easily do this with the quick cooking oats. I also make cream of rice with berries. or acadian ployes (buckwheat pancakes, super easy) or pancakes with grilled fruit or agave nector

well... hopefully you have some soy sausage and gluten free french toast on hand. add some earth balance buttery spread, sprinkle with cinnamon. a glass of organic oj or a cup of green tea with organic honey and lemon. and you have a great start for the day. =)

Oatmeal, some brown sugar and maple syrup. i prefer steel cut, but instant and rolled is good.
If you have fruit, that would work in there too.
Do you know how to make donuts?

Greens with fruits (mango) with peanuts topped with squeezed mango.... you can substitute your greens with bread
