I love jacket potatoes. My favourite filling is baked beans and cottage cheese, and maybe a splash of sandwich pickle - yum. Can anyone suggest anymore tasty fillings?

I go a little simpler with my baked spuds (I'm US based).

My fav stuffing is simply some vegan 'butter', a healthy dose of freshly cracked black pepper, a minced Leek (including some of the green), a tad of chef's salt and a dollop of tofu 'sour cream'. It may sound too simple and boring but the combination is lovely as the combination brings out the best of the earthy potato flavors and the aroma of the Leek is heavenly!!

Preparation of the potato is just as important to me as the filling. Never wrapped in foil but instead slathered with E.V. Olive or Coconut oil and baked at high heat until the jacket is crispy and the interior is fluffy and steaming. I despise soggy 'taters!!

I feel that sour cream and chives is always nice with some salsa. I havn't had a jacket potato in years but the memory lingers,mmmmmmmmm

THer is a kind of cheese that comes with chips. I'd like that as well.
